Job Description
RESPONSIBILITIES:
  • Responsible for preparing and servicing all pastry items according to the production standards established by the Pastry Chef and Pastry World.
  • Leading the 1st, 2nd & 3rd Commis, Kitchen Helpers & Apprentices offering guidance and training in accordance with hygiene, baking standards, recipes, recipes of Pastry World.
  • Assists with the efficient running of the Department.
  • Helping Pastry Sous Chef and Pastry Chef to develop new products.
  • Demonstrate and ensuring the team understanding and working with high standard of food, hygiene and safety principles.
  • Monitoring portion and waste control to maintain profit margins.
  • Knowledge and experience in a variety of different baking methods, excellent in baking skill.
  • Effective trainer, experienced in the delivery of skills training.
  • Flexibility with working hours including nights, weekends and public holidays.
  • Coordinate and take care of daily products preparation and duties assigned by the Pastry Sous Chef to complete the daily tasks.
  • Full awareness of all menu items, their recipes, methods of production and presentation standards.
  • Ensure effective communication between staff by maintaining a secure and friendly working environment.
  • Establishing and maintaining effective inter-departmental working relationships.
  • Ability to produce own work in accordance with deadline and to assist and encourage others in achieving this aim.
  • Check periodically expiry dates and proper storage of products in the department.
  • Consults daily with Sous Chef and Pastry Chef on the daily requirements, and functions. 
  • Assess quality control and adhere to Pastry World.
  • Carry out any other duties as required by management.

COMPETENCY REQUIREMENTS

  • Certificate/ Diploma in Food Beverage Services Management / Pastry / Bakery or equivalent.   
  • 1 – 2 years working experience in similar field. 
  • Able to use basic formula in MS Office.
