Job Description - Waiter / Waitress

Job Summary

  • The Waiter / Waitress will support the Floor service into daily operations of the restaurant to ensure all food / beverage orders are served as promptly to every floor / guest.
  • He / She is in charge of keeping the service station clean, organized and well stocked in order to deliver support to the supervisor and service to the guests.
  • To clean and clear tables at all times to ensure guest expectation. Help family members to have a smooth operation.
  • To work along with the kitchen / bar team and have a good communication with the team.
  • Ensure that hygiene and cleanliness is well maintained and up to standard

5 Key Points of Job Role

1. Knowledge

  • To have thorough knowledge of all food and  beverage offerings and menus. 
  • To have thorough knowledge of all SOP’s and  P&P’s about service and restaurant operations. 
  • To have thorough knowledge on F&B operations  and F&B safety. 
  • To have thorough knowledge on how to operate  service equipment. 
  • To be aware of all hygiene and sanitation  standards and procedures. 
  • To be aware of fire and life safety standards and  procedures.

2. Service

  • Walk around the floor helping the team to clean & clear tables when needed. 
  • Help team to deliver the food/beverage to the right tables 
  • Support the floor staff with the pouring of Wine,  open Beers, ice buckets and others items coming from the printing machine tickets and delivered to the right tables. 
  • Set up tables that are having a meal with cutlery,  small plate and napkins. 
  • Always acknowledge and greet guests in a prompt,  friendly and genuine manner. 
  • Speak clearly when you are addressing your  guests as FRIENDS. 
  • Communicate to the team if any issue with service  and guest experience. 
  • Treat everyone with respect
  • Co-operate with other department; work as a team
  • Arrive on time for your shift properly dressed. If your appearance is sloppy, your performance will be sloppy.
  • Take pride in yourself, and others will be proud of you.

3. Operations

  • Host / Waiter / Waitress are MULTITASKING part of service  responsible for the delivery of food and beverage to the correct tables. 
  • Directly responsible in providing  support to the Floor, Bar and Kitchen, delivering food and beverage, cleaning tables, keeping the station clean, organized and well stocked at all times. 
  • Delivers and maintains the highest level  of service at all times. 
  • Host / Waiter / Waitress pride themselves in providing ‘eye for detail’ when food and beverage must to be delivered to make sure all is correct and no mistakes. 
  • Host / Waiter / Waitress responsible to ensure service and expeditor stations are clean at all times. 
  • Helps taking the dirty glasses, plates,  chinaware, bottles etc. 
  • Responsible for Mise En Place preparation such as ashtrays, napkins, menus, cutlery etc… 
  • Host / Waiter / Waitress is obliged to follow PTT Family’s Service Sequences and Guidelines. 
  • Trained to deliver a consistent service that is designed to highlight & distinguish our Family style service as Smile always to the guest and answer if they need anything from them 
  • Organize and be in control of his/her station. 
  • Help his/her family when is needed. 
  • Know all table numbers and section
  • Ensures all dishes match the ticket  including modifiers and special requests. 
  • Check quality of plate presentation.
  • Delivers the correct food to the correct table number. 
  • Communicate with wait staff regarding requests and relay those to the kitchen. 
  • Inform wait staff at all times regarding any incomplete orders/deliveries of food or drinks. 
  • Helps to complete closing side work duties when needed.

4. Leadership

  • Ensure that restaurant is properly set up and  equipped for smooth running of operation. 
  • Ensuring that ambience level is kept at all times.
  • Ensure implement the procedures for food and  beverage safety, hygiene and sanitation. 
  • Ensure any new Host / Waiter / Waitress to be well trained from a  senior Host / Waiter / Waitress.
