Job Description - Hozpitality - Substitute Cafeteria Cook

A Cafeteria Cook requires good communication and culinary skills. The desired cook candidate will have hotel cooking experience and a culinary degree. A cafeteria cook should have a professional knowledge of cooking ingredients and procedures. Intermediate cook will work single stations in the kitchen and require significant supervision and training. JOB FUNCTIONS:

  • Food Preparation
  • Prepares meats, fish, vegetables, sauces, salads, desserts (each in accordance to the recipes and directions provided by the chef).
Compliance
  • Ensure sufficient "mise-en-place" of his/ her assigned station before and after meal period.
  • Ensure proper food presentation following set standards.
  • Ensure clean workstation at all times.
  • Ensure sanitary measures and methods during preparation and cooking of all food items.
Qualifications
QUALIFICATIONS: ESSENTIAL:
  • High school diploma or equivalent.
  • Two years' experience as a Commis Tournant in a high-volume kitchen or a combination of skills and education & experience that provides skills required for this position.
  • Fluent in English; efficient verbal & written communication skills
  • Experience preparing breakfast/brunch/lunch/dinner.
DESIRABLE:
  • Two-year degree course in Culinary Arts or equivalent training.
  • Certification from the New York State Department of Health.
KNOWLEDGE, SKILLS, & ABILITIES: ESSENTIAL:
  • Service Orientation
  • Excellent knife skills (chopping, slicing, dicing, etc. meat, vegetables, fish, fruits).
  • Knowledge of sauces and cooking techniques.
Self-Efficacy
  • Ability to execute recipes involving all phases.
  • Ability to prepare all dishes consistently and according to chef's specifications/ instructions.
  • Ability to work in a high-pressure environment.
  • Other Physical Skills
  • Ability to stand for long period of time and withstand high temperature.
  • Ability to bend/lift/push/pull/carry around equipment, etc. in excess of 50 lbs.
