Makati Shangri-La is a deluxe hotel located at the center of Manila’s financial and commercial district, only minutes away from the international airport.  The hotel offers spacious guestrooms and suites, the exclusive Horizon Club, world-class restaurants and bars, top-of-the-line recreational facilities, complimentary broadband and Wi-Fi Internet access, and premiere function rooms.   


 


As a Chef de Cuisine (Sage Grill), you are responsible for the full culinary operations of the Grill & Bar kitchen, ensuring high‑quality grilled dishes, bar bites, and comfort‑food offerings that align with the brand’s concept. The role oversees menu development, daily operations, cost control, hygiene, team management, and collaboration with the bar team to ensure cohesive food‑and‑beverage synergy.


 


Key Responsibilities:



  • Oversee day‑to‑day kitchen operations, ensuring smooth service during lunch, dinner, and bar peak hours.

  • Maintain high culinary standards for grilled items (steaks, seafood, skewers), bar snacks, and signature comfort dishes.

  • Ensure consistency in taste, presentation, and portioning.Conduct regular line checks and supervise food production.

  • Ensure compliance with SFS / SFSMS, HACCP, and all hygiene SOPs.

  • Train and mentor team members in grilling techniques, butchery, smoking, seasoning, and bar‑food plating standards.

  • Foster a positive team culture, ensuring proper grooming, discipline, and morale.Manage food cost, yield, stock levels, and wastage control.

  • Work closely with purchasing to source premium meats, seafood, and seasonal items.

  • Must have experience working in either a luxury restaurant or a 5* hotel environment.

  • A self-starter and a teamplayer.

  • Committed to serving food of the highest quality.

  • Enjoys being creative with an eye for detail.

  • Enjoys planning, organising and problem solving.

  • Communicates and write with fluency in English and local language.

  • Displays curiosity and takes time to learn and understand new culinary trends.

  • Enjoys being challenged.

  • Willing to work shifts.
