Job Description - Chef Lecturer

The Chef Trainer will serve as a teacher and role model, teaching key skills and inspiring participants to produce top quality meals within the allowed budget, whilst maintaining high standards of cleanliness and hygiene. Assist with all aspects of production and service of meals including cooking, replenishment and clean up. Complies with Department of Health Standards, all safety procedures, departmental policies and procedures and all applicable regulations. Assist with functions to ensure the best standards are delivered.
Note: This is not an all -inclusive list. Additional duties may be assigned.

 Train staff on food preparation and cooking as per the needs of the unit
 Check food to make sure of its quality
 Train staff to cook food by a range of methods
 Train staff to divide food into portions and make sure that the food is well presented
 Train staff to produce top quality food within budget specifications
 Train staff on Food Safety & Hygiene according to Company Standards
 Train staff to prepare food to meet special dietary requirements
 Assist with functions
 Assist with any back of house duties as per the needs of the unit
 Lecture Professional Cookery Students

Requirements

Competencies / Experience / Skills / Qualifications:

Competencies:

 Good knowledge of food safety & hygiene practices
 Good knowledge of stock control and wastage
 Good knowledge of menu planning and dietetic requirements
 Excellent knowledge of cooking
 Excellent knowledge of plating
 Menu Planning

Experience:
 Professional culinary training or experience working in the food industry.
 Interest and comfort in working with various individuals from diverse backgrounds.
 Comfortable speaking in front of people
 Ability to travel to various units in and around Western Cape.
Skills:

 Ability to train staff to prepare various dishes within specifications
 Ability to work with minimum supervision
 Great timekeeping
 Motivated


Qualification:

 Diploma in Food Preparation & Cooking
or
 Professional Cookery Qualification
 Assessor Registration
