Job Description - Chocolate Production



Basic Function: 

Assist the Head Chocolatier in the production of Artisan Center chocolate lines to maintain inventory levels of finished product and raw materials, product consistency, and to ensure that the chocolate meets the quality and standards of Ghyslain Chocolatier, Inc.

 

Requirements:

High School Diploma/GED.  Physical demands are standing, stooping and kneeling, use of hands, eyes and arms.  Must be able to lift and carry objects up to 50 lbs.  Clean kitchen uniform, hair restraint and appropriate shoes are to be worn.  Single use gloves are to be worn with Ready to Eat (RTE) foods.

 

Equipment Used: 

Chocolate Tempering Machine, Air spray, oven, stove, filler, enrobing, scale

Key responsibilities and accountabilities:

Including, but not limited to:


  1. Chocolate production to consist of, but not limited to



  • Ganaches

  • Shells

  • Truffles

  • Signature chocolate line

  • Chocolate sculptures

  • Pastry decoration

  • Hand painted chocolates

  • Deliver chocolate to packaging department

  • Package chocolate



  1. Assist Chocolatier in meeting inventory par levels for chocolate production.

  2. Package, label, date, and store within cGMP guidelines

  3. Ensure proper storage and rotation of chocolate to maintain quality

  4. Maintain chocolate molds to standard for optimum product quality, cleaning schedules for molds after each season and storage area organized

  5. Work as a team to meet weekly production goals

  6. Coordinates the efforts of self in a timely, efficient, cost-effective manner toward customer satisfaction and shop profitability.

  7. Document work completed for Batch Tracking reporting.

  8. Manage all WIP, including documentation and rotation.

  9. Conforms to established portion control quantities for all recipes

  10. Maintain all utensils in a clean and sanitary manner. Immediately clean away any spills or breakage

  11. Clean and Sanitize Kitchen.  Clean walls and floors of kitchen as needed

  12. Clean refrigerator/freezer in department as scheduled and as directed.

  13. Practice preventative maintenance

  14. Contribute to a positive work environment by focusing on assigned tasks, promoting a quiet work environment that allows coworkers to produce efficiently to meet the company’s goals for product quality, production efficiencies and customer service.

  15. Assure compliance with health department requirements, safety codes and HACCP procedures relevant to food and kitchen operations

  16. Minimize waste in the process.  Utilize waste log sheet to record products waste

  17. Clean dishes and run the dishwasher, store the cleaned dishes in proper location and on the proper shelves
