Bird weight can be anywhere from 9 1/2 pounds - 11 1/2 pounds.  

Sorter on maestro stand makes sure the birds are open from the back up ventor to the opener, and that the viscera has been removed along with looking for other defects. 

Final sorters assess every fourth bird for fecal and other defects.

Sorters rotate and are responsible, depending on rotation, for using a knife to remove drums with synovitis and major bruising, and wings with bruising and other defects. 

The persons in the evis department who use scissors are on the back up ventor/opener and don't have to be sorter certified.  Everyone from the maestro down on the line is sorter certified.
