Restaurant Manager

Tropezon is a local modern Spanish restaurant in the heart of Miami Beach, where the bold flavors of contemporary Spain meet the vibrant energy of South Florida. We’re looking for a passionate, hands-on General Manager to lead our team and help shape an exceptional dining experience — every table, every shift, every night.

ABOUT THE ROLE

As our Restaurant Manager, you will be the driving force behind both the front- and back-of-house operations at Tropezon. You’ll work directly with ownership to uphold our culinary vision, build a high-performing team, and create the kind of warm, polished hospitality that keeps guests coming back. This is a role for someone who leads with presence, thinks like an operator, and genuinely loves hospitality.

WHAT YOU’LL DO

• Oversee all daily restaurant operations, from opening to close


• Hire, train, schedule, and develop a front-of-house team of 8–15 staff


• Partner with the Executive Chef to align service standards with the kitchen’s vision


• Drive guest satisfaction by maintaining a strong floor presence during service


• Manage budgets, labor costs, P&L, and vendor relationships


• Monitor inventory and coordinate purchasing with BOH leadership


• Ensure compliance with all health, safety, and liquor regulations


• Lead pre-shift meetings and ongoing staff education on menu and wine


• Handle guest concerns swiftly and gracefully


• Collaborate with ownership on events, promotions, and seasonal programming

WHAT WE’RE LOOKING FOR

• 3–5 years of restaurant management experience, ideally in an upscale or chef-driven setting


• Proven ability to lead, motivate, and retain a service team


• Strong financial acumen — comfortable with P&L analysis and cost controls


• Deep knowledge of food, wine, and Spanish or Mediterranean cuisine is a plus


• Fluency in reservation and POS systems (OpenTable, Toast, or similar)


• Excellent communication skills in English; Spanish is a strong plus


• Calm, solutions-focused mindset under pressure


• Flexible availability, including evenings, weekends, and holidays


• Miami Beach hospitality market experience preferred


• Kind, fun, self-motivated and obsessed with hospitality
