• focus on small plates for sharing – typically chips with different dips (queso fundido etc.), mini burritos, tacos (fish, duck/orange, chicken, summer vegetables etc., quesadilla, ceviche,
• also some tex-mex favourites like nachos…
• for mains, more authentic delicatessen such as Yucatecan style marinated chicken, a few fish varieties, Mole Poblano, and tortilla based favourites like shrimp and scallops, vegetarian enchiladas, etc.
• Ultimately the Mexican Executive Sous chef job should work with us to R&D engineer and refine the menu.
• look at Wahaca in London, Nopalito in SanFran, Toloache in NYC, perhaps as reference points from your part of the world
• Job location: Kuala Lumpur, the capital city of Malaysia, ASIA
