Four Seasons Hotel and Residences is part of a 65-storey mixed-use tower that will include 242 Four Seasons Private Residences, 27 serviced apartments, a 209-key Four Seasons Hotel and a six- floor of 250,000 square foot luxury retail podium, collectively known as Four Seasons Place Kuala Lumpur. The Hotel introduces several unique dining outlets to the city, including a Cantonese restaurant, lobby and rooftop pool bars, and an all-day dining restaurant with sweeping views of the Petronas Twin Towers. The Hotel will also offer an executive lounge for business travelers, a serene spa, wellness-focused fitness centre and rooftop infinity pool offering panoramic views of Kuala Lumpur’s endless skyline. Lush landscaping around the rooftop pool and terrace will create an urban oasis, echoing the greenery of the KLCC Park below.

The latest addition to the city’s dramatic skyline and a vibrant hub for both business and leisure travelers, Four Seasons Hotel Kuala Lumpur will be conveniently located in close proximity to the city’s major attractions, including the Petronas Twin Towers and the Kuala Lumpur City Centre (KLCC). Junior Sous Chef - Garde Manger

Four Seasons Hotel Kuala Lumpur is looking for a Junior Sous Chef for Garde Manger. Candidates with passion for excellence, expertise in hospitality operations and proven leadership experience are invited to apply for a career with Four Seasons. As the member of the Main Kitchen Brigade, the Junior Sous Chef - Garde Manger, works across kitchens and functions as a commissary for the other outlets.

Reporting to the Sous Chef, your main responsibilities will include:

We are seeking an individual whose hands-on leaderships style will motivate and drive a team keen for knowledge and growth. Previous experience in a similar role is preferred.

Supervising the day-to-day running of the Garde Manger Kitchen. A hands-on role involved in all areas of preparation, with excellent potential to mentor a passionate team

Excellent knowledge of HACCP is key. Must be able to place orders and requisition all food items needed daily from the food storeroom in concert with all cooks. The ability to verify the quality and presentation of food produced prior to meal periods.

Must be a strong communicator and delegate the production schedule for the day, collating quantities to be produced from the forecast and for the next service. Ensuring training is occurring on an ongoing basis with all employees.

Conducts daily storeroom inspections of all walk-in refrigerators in the Garde Manger to ensure that proper rotation of food is done. The ability to assist the storeroom Receiving Clerk in reviewing the quality of goods received. The ability to review the refrigeration areas of the kitchen and store rooms to ensure the proper usage of merchandise..

Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.

Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen. 

Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality. 

Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments. 

Candidates must have a firm knowledge of the local market and speak Bahasa Malaysia as well as being fluent in English. Must have the right to work in Malaysia.
