Job Description - Chef de Partie

Mr Duncan Collective

190 seat Modern Global Cuisine restaurant in the heart of the recently developed China Town Mall food precinct in the iconic Duncan Street. 

Position Summary

A Chef de Partie role is not an entry-level position, and is obtainable only after a chef has gained considerable experience working in kitchen at a lower level. This is an important job in any kitchen that comes with a lot of independence.

Responsible for all culinary dishes that are prepared in their section and must be very knowledgeable about his or her specialty, as well as culinary functions in general. 

Must also be very organised and comfortable working in a high-pressure environment, able to give orders within their section, as well as reliably carry out orders handed down to them by the Sous, Head and Executive Chefs.

Actively prepare, cook and plate hot and cold dishes for service to customers ensuring high quality and consistency in all dishes. Maintain clean and safe work practices at all times abiding by policy and relevant legislation.

Reports To

Sous Chef

Required Knowledge and Experience

Minimum of 3-Years industry experience

Previous experience as a cook/chef in a Chef de Partie role 

Understanding of special diets and dietary requirements, Japanese ingredients and methods of cookery

Qualifications

Participate in mandatory training (i.e. OH&S and Fire Safety)

Formal trade qualifications in Commercial Cookery or Relevant field

Accountabilities

  • Work as a kitchen team

A Mr Duncans’ Chef de Partie must be able to assist on other sections when need be for service and preparation 

  • Respect the Mr Duncans' Brand
  • Respect and follow the wishes and directions of Senior Mr Duncans' Chefs
  • Follow and stick to the recipes and methods from the Mr Duncans' Kitchen Bible
  • Positively and constructively manage, direct and support all team members
  • Lead by example in upholding and maintaining all standards and procedures 
  • Delegate tasks to junior staff and follow up on progress and completion
  • Focus on service excellence and exceeding customer expectations
  • Demonstrated understanding of Accreditation standards and comply with standards as they relate to the provision of hospitality services
  • Ensure that appropriate stock control and stock rotation procedures are followed and that all food items are stored in an appropriate way to minimise wastage and maximise financial return 
  • Ensure that all kitchen equipment is kept in safe working order and any faults are repaired in a timely fashion
  • Undertake general kitchen cleaning duties and ensure that appropriate cleaning products are utilised
  • Participate in a working environment designed to foster team work
  • Ordering food stock in accordance with budgetary requirements
  • Check the delivery of food supplies is consistent with numbers, quality and type required
  • Ensuring the kitchen is clean and hygienic at all times in line with policies and legislation
  • Ensure correct and ongoing rubbish removal in line with policies and environmental concerns
  • Set-up and pack down of kitchen and clean up as required
  • Follow any reasonable direction not stated in this position description and be aware of your role and responsibilities
  • Perform other manual tasks as required from time to time
