Job Description - Chef de Partie, Sous Chef - Rapid Progression

We are on the lookout for an energetic Chef de Partie, Sous Chef to join our high calibre team at Six Counties Cafe and Restaurant in Armidale, Tamworth & North West NSW.

We are located in the iconic New England Regional Art Museum - NERAM's art collection is the second largest and most valuable regional public collection. The kitchen and cafe/restaurant went through a complete transformation in 2021 and we are ready to embrace it's potential, including a focus on our restaurant, functions, events & catering.

Six Counties Cafe & Restaurant are looking for a CDP and a Chef with a particular interest in modern Australian cuisine. We are looking for chefs that will share our love of food and have an eye for detail. Chefs that are passionate about food and supporting & using local produce where ever possible. We're hardworking and supportive team. 

We trade 6 days for breakfast and lunch, and 4 nights for dinner. 

Required:

  • exemplary trade skills
  • high attention to detail including presentation skills.
  • effective communication skills, especially during service.
  • A firm understanding of culinary techniques, produce & equipment.
  • Ability to remain calm, work effectively & consistently during service
  • Recent releveant experience with contactable references.
  • someone that still loves cooking and hospitality, our industry that has taken a real beating these last two years!

Chef requirements:

  • Experience leading a team in the head chef's absence.
  • Ability to co-ordinate daily tasks with kitchen staff.
  • Work collaboratively with the head chef in menu planning & design
  • Demonstrated ability of knowledge of standard procedures relating to equipment handling, safety, hygiene, food preparation. Commitment to food safety legislation and HACCP
  • Supervise junior staff
  • Understanding of rostering, food costs, wage percentages.
  • An expected level of sophistication around knowledge, skill and dealing with junior staff (kitchen & floor)

We will offer you:

  • CPD $60,000 - $70,000 per annum depending on experience
  • Chef $70,000 - $75,000 per annum depending on experience
