Dolphins Leagues Club is currently seeking a highly motivated and enthusiastic Commis Chef and Sous Chef to join our exceptional team.

With a range of food outlets, including Koopa Café, On The Green, Bistro forty20, 8 function rooms, Dolphins NRL, and a 10,000-seat KAYO Stadium, supported by over 45,000 Dolphin members, this is an exciting opportunity to be part of a dynamic and thriving environment. Key Responsibilities will include:

  • Oversee department operations, including menu input, food preparation and presentation.
  • Assist Executive and Head Chef with all culinary requiremnents, while fostering a positive and collaborative work environment.
  • Maintain consistent food standards and cleaning/hygiene routines.
  • Lead kitchen departments to ensure efficient and productive delivery of quality foods.
  • Assist Executive and Head Chef  in developing / maintaining catering techniques and procedures, food safety regulations and workplace health and safety.

What we’re looking for:

  • Extensive experience working in the kitchen at a high level.
  • Relevant culinary qualifications and certifications.
  • Undeniable pride for creating and delivering consistent, high quality produce.
  • Solid experience with a kitchen team.
  • Passion for innovative and showcasing creativitymenu design.
  • The ability to work under pressure whilst executing precise time management skills involving planning and prioritising.
  • Capability to perform in a fast-paced Kitchen with an ever growing function operation.
