Babylon Sydney is seeking an experienced Head Chef to take the reins of its high-performing kitchen team. Located above Pitt Street Mall, Babylon is a vibrant rooftop restaurant and bar inspired by the flavours, hospitality and traditions of the Levant, delivering a premium share-style dining experience in one of Sydney’s most unique venues.

This is a rare opportunity for a Head Chef with a genuine passion for Middle Eastern cuisine, open-fire cooking and large-scale restaurant operations. Working alongside a strong Senior Sous Chef and established kitchen brigade, you will focus on leadership, menu execution, team development and maintaining the exceptional standards that have made Babylon a standout Sydney dining destination.

Babylon's menu celebrates the rich flavours of the Middle East, with many dishes cooked over wood fire and charcoal using a custom-built Mangal grill and rotisserie system.

What We’re Looking For

• Previous experience as a Head Chef in a premium, high-volume restaurant environment

• Strong knowledge and experience with Middle Eastern, Levantine or Mediterranean cuisine

• Confidence leading large kitchen teams and developing future leaders

• Experience managing food cost, labour cost, stock control and kitchen financials

• Strong understanding of rostering, ordering and kitchen systems

• Passion for woodfire cooking, charcoal grilling and premium produce

• Ability to maintain consistency and quality in a fast-paced service environment

• Excellent communication and leadership skills

What You'll Be Responsible For

• Leading daily kitchen operations across lunch and dinner services

• Driving food quality, consistency and presentation standards

• Managing labour, wages and food costings to meet budget targets

• Mentoring and developing the wider kitchen team

• Working closely with senior venue leadership on menu development and business performance

• Maintaining compliance across food safety and workplace safety standards

• Continuing to evolve Babylon's renowned Middle Eastern offering
