Head Chef - RQ Yacht Squadron

The Royal Queensland Yacht Squadron (RQYS) seeks a talented and experienced Head Chef to lead our culinary team to success across our Bistro, Function Spaces and Regatta Catering.

Nestled in picturesque Manly Harbour, RQYS is home to a 120-seat bistro, two large function rooms, three smaller meeting rooms and a 90-seat Auditorium.  The venue also has large waterfront lawns, able to accommodate 1000. The venue also supports the nearby Manly Marina Cove Motel.

This is an exceptional opportunity for an accomplished kitchen professional, culminating in the execution of plans for the arrival of Olympic Teams for the 2032 Sailing Competition.

Key Responsibilities:

• Develop and maintain seasonal bistro menus that align with the Squadron’s marketing strategy and objectives.
• Develop and maintain event and function packages to deliver exceptional experiences to corporate, private, wedding, educational and sailing clients.
• Manage kitchen operations, and ensure kitchen food and labor costs remain within budget, implementing cost-saving measures where possible.
• Provide leadership and training to kitchen staff, fostering a culture of excellence and continuous improvement.
• Maintain rigorous standards of hygiene and cleanliness in line with regulations.
• Collaborate with the General Manager and front of house team to ensure seamless service and guest satisfaction.

The Ideal Candidate:

• Holds a Certificate IV in Hospitality (Commercial Cookery) or equivalent.
• Possesses a Food Safety Supervisor Certificate.
• Brings a minimum of three years’ experience in a similar leadership role.
• Demonstrates culinary expertise across diverse cuisines and modern cooking techniques.
• Exhibits strong financial acumen and the ability to manage kitchen costs effectively.
• Has excellent interpersonal skills and a positive, team-oriented attitude.
