The Opportunity
We are seeking an experienced, passionate, and inspiring Bar Manager to lead our award-winning Mary Mary team.
As Bar Manager, you will be responsible for the overall leadership and success of one of Hobart's premier cocktail destinations. You will drive exceptional guest experiences, champion innovation in beverage offerings, lead and develop a high-performing team, and ensure operational excellence across all aspects of the venue.
With a hands-on leadership style and strong commercial acumen, you will play a key role in maintaining Mary Mary's reputation for world-class cocktails, outstanding service, and luxury hospitality.
Key Accountabilities
- Lead the day-to-day operations of Mary Mary, ensuring seamless service and exceptional guest experiences.
- Inspire, mentor, and develop the bar team through coaching, training, performance management, and succession planning.
- Foster a positive, high-performing culture that reflects Marriott's values and luxury service standards.
- Lead by example on the floor, engaging with guests and creating memorable, personalised experiences.
- Oversee the creation, execution, and ongoing development of the cocktail program in collaboration with the Food & Beverage leadership team.
- Maintain exceptional knowledge of cocktails, spirits, wines, beers, and emerging industry trends to continually elevate the guest offering.
- Ensure all beverages are prepared and presented consistently to brand and venue standards.
- Manage beverage cost, stock control, inventory, ordering, supplier relationships, and wastage to achieve financial objectives.
- Analyse sales performance and implement initiatives to maximise beverage revenue and profitability.
- Develop and execute promotional activities, seasonal beverage menus, and special events to enhance the venue's reputation.
- Ensure compliance with Responsible Service of Alcohol legislation, food safety requirements, workplace health and safety standards, and Marriott brand policies.
- Manage guest feedback and service recovery professionally, ensuring issues are resolved promptly and effectively.
- Prepare rosters, manage labour costs, and oversee daily administrative and operational requirements.
- Collaborate closely with the wider Food & Beverage leadership team to achieve departmental and hotel objectives.
- Maintain the highest standards of cleanliness, presentation, and operational excellence throughout the venue.
- Champion continuous improvement through innovation, quality, and exceptional service delivery.
Profile
- Previous experience as a Bar Manager or in a senior leadership role within a premium cocktail bar, luxury hotel, or high-end hospitality venue.
- Extensive knowledge of cocktails, premium spirits, wines, beers, and contemporary beverage trends.
- Demonstrated experience leading, coaching, and developing high-performing hospitality teams.
- Strong commercial acumen with experience managing beverage costs, labour budgets, inventory, and financial performance.
- A passion for creating exceptional guest experiences and delivering personalised luxury service.
- Outstanding leadership, communication, and interpersonal skills.
- Excellent organisational and problem-solving abilities with the capacity to thrive in a fast-paced environment.
- Experience managing supplier relationships, stock control, purchasing, and operational planning.
- Proven ability to resolve guest concerns with professionalism and confidence.
- Current Responsible Service of Alcohol (RSA) certification.
- Availability to work evenings, weekends, and public holidays.
- A positive, hands-on leadership style with a commitment to excellence, innovation, and luxury hospitality.
