Operating across breakfast, lunch and dinner, Peppina welcomes up to 180 guests and features an intimate 18-seat Private Dining Room. This is an exciting leadership opportunity for someone who thrives on the restaurant floor, loves building relationships and has the experience to lead a high-performing team in a fast-paced, premium dining environment

Day-to-Day

• Lead and manage all day-to-day restaurant operations across breakfast, lunch and dinner service periods.


• Ensure staffing levels are aligned to business demands while managing labour effectively.


• Coach, mentor, and develop team members to achieve operational excellence and career growth.


• Champion Marriott and The Tasman values, acting as a custodian of the restaurant's culture.


• Equip associates with the tools, training, and information required to deliver exceptional guest experiences.


• Drive service excellence, ensuring every guest interaction reflects Peppina’s warm, welcoming and guest-focused approach to hospitality.


• Monitor financial performance, productivity, and service metrics to achieve business objectives.


• Build strong relationships with guests, associates, local diners and key stakeholders to support the restaurant’s ongoing success.


• Maintain a strong presence on the restaurant floor, creating memorable experiences for guests while supporting the team through busy services.
