About the role

QT Canberra is currently seeking a talented and experienced Head Chef to lead our signature restaurant Capitol Bar & Grill’s culinary team at our vibrant bar and grill restaurant, along with breakfast, In Room Dining. As the Head Chef, you will play a crucial role in creating a memorable dining experience for our guests. Your passion for food, creativity, and leadership skills will be essential in maintaining the high standards of our kitchen.

Key Responsibilities

  • Culinary Leadership: Lead and mentor the kitchen staff, fostering a positive and productive work environment. You’ll be responsible for menu development, recipe creation, and ensuring consistent food quality.
Food Preparation: Oversee all aspects of food preparation, including cooking, plating, and presentation. Ensure food safety and sanitation standards are met and maintained. Inventory and Stock Management: Manage food inventory, control costs, and minimize waste. Establish relationships with suppliers and monitor quality and pricing of ingredients. Team Management: Recruit, train, and supervise kitchen staff. Create rosters and delegate tasks efficiently. Fostering a positive and productive kitchen culture. Quality Control: Implement quality control measures to maintain the highest standards of taste, presentation, and portion control. Compliance: Ensuring compliance with health and safety regulations, food handling guidelines, and HACCP standards. Working with the Executive Chef closely on obtaining the HACCP Certification within the property. Proven experience as a Head Chef or in a similar leadership role in a bar and grill or similar establishment.

Skills & experience 

  • Culinary degree or equivalent experience in a high-volume kitchen.
Strong understanding of various cooking methods, ingredients, equipment, and kitchen procedures. Knowledge of food cost control, stock management, and budgeting. Leadership and team management skills. Exceptional creativity and passion for food. Excellent communication and organizational skills. Ability to work in a fast-paced environment and adapt to changing circumstances. Current food safety supervisor certificate and knowledge of health and safety regulations.
