Job Description - Retail Executive Sous Chef Marvel Stadium

The Delaware North Culinary team at Marvel Stadium have an exciting opportunity for a full time Executive Sous Chef to lead the retail culinary team in delivering the highest quality in quick service restaurant dining experiences.

Delaware North is a leader in the catering and hospitality industry. We are dedicated to delivering exceptional experiences at Marvel Stadium, one of the most iconic entertainment venues in the region.

Marvel Stadium is one of Melbourne’s leading sports & entertainment venues with a capacity of 53,000. Marvel Stadium is recognised as one of the nations most iconic sporting arenas, with a blend of sporting events and concerts supported by a Food and Beverage offering from the likes of renowned restaurants such as Lee Ho Fook and Gallery by Adrian Richardson.

This position will be a 9 month contract with a plan of extending beyond. 

Role Overview:

We are seeking a passionate and skilled individual to take on the role of Executive Sous Chef – Retail on a full-time basis. The successful candidate will be a culinary enthusiast with a commitment to delivering the highest-quality in quick service restaurant experiences. As a key leader within our culinary team, you will play a pivotal role in elevating our retail food offering to new heights.

Responsibilities of the Executive Sous Chef – Retail will include:

  • Develop and implement innovative menu concepts that align with current food trends and customer preferences.
  • Oversee culinary operations including high volume production
  • Operational delivery of event-day and non-event day catering, across a variety of cuisines and outlets
  • Ensure adherence to the highest standards of food quality, presentation, and safety protocols.
  • Support with control of the department budget and food costs
  • Combining with other F&B arms to provide first-class dining to all customers.
  • Foster a positive and collaborative work environment

The successful candidate will have:

  • A passion for high-quality quick service dining offerings and a creative approach to menu development
  • Proven experience as a Chef de Cuisine or similar role in a fast-paced high volume culinary environment.
  • A successful track record of managing large-scale or high-end restaurant kitchen operations
  • Strong leadership skills with the ability to motivate and guide a team.
  • Expert knowledge of food safety regulations and best practices.
  • Excellent communication and organizational abilities.
  • Experience with menu setting and stock control.
  • Appropriate culinary qualifications
  • Competence in using business technology such as stock control systems, spreadsheets, accounting systems.
