The Manly Club on Gilbert is a registered club – but not as you know it. We are tucked away from the hustle and bustle of the Manly Corso, yet only a stone’s throw away from Manly Wharf and known for our exciting food and a place to have a long lunch or a fun dinner. 

Reporting to our Head Chef we need an experienced Sous Chef to assist in producing the quality food our customers love.

The successful candidate will;

• Direct the food preparation process, delegating / completing tasks and managing day to day kitchen activities. 
• Cook and prepare high quality dishes, ensuring that all menu items are prepared and presented according to established recipes and standards.
• Assist the Head Chef to create menu items, recipes and develop dishes.
• Supervise all kitchen stations.
• Supervise, motivate, mentor and working closely with other Chefs of all levels.
• Responsible for health and safety and food hygiene practices  
• Ensure food quality and excellent standards are maintained for all dishes created.
• Assist with determining food inventory needs, stocking and ordering whilst minimising waste and pilferage.  
• Maintain procedures to ensure the security and proper storage of food and beverage products, inventory and equipment. 
• Be a positive and enthusiastic member of the team. 

The ideal candidate will be an experienced qualified Sous Chef with a minimal 5 years’ experience in a similar role or you are a Junior Sous Chef looking to take that next step up. You will have a passion for what you do, have strong attention to detail and have great communication skills.
