The role 

The Wine Operations Manager is responsible for the management of Crown Perth's new Wine Bar which will be opening in December 2025. This role is responsible for implementing operational plans for the outlet, motivating, and developing the team and building effective relationships utilising a service-focused, energised, and an authentic leadership style.

You will also be responsible for the contract management and supply of all wine and champagne across Crown Perth. This includes the writing and preparation of wine lists, maximising promotional opportunities through supplier relationships and the coordination of wine and champagne based events.

Key Responsibilities: 

• Develop relationships with local wineries and suppliers - all in consultation with Director of Wine and GM Restaurants.
• Implementing the business plan in the outlet.
• Monitor and improve consistency of quality product and services to enhance overall customer experience and champion the service values through the business.
• Work with F&B Marketing and senior managers to define the offers, price points and enhance the wine offer branding.
• Price and design wine list in accordance to budgeted cost of sale targets.
• Mentors and coaches bar team to improve operational and service capabilities
• Develops and delivers initiatives to maximise outlet performance

About you

You’ll bring the following:

• WSET level 3 knowledge expected
• Experienced and accomplished sommelier
• Proven experience in Writing and creating wine lists
• Demonstrated operational Food & Beverage management experience
• Experience with 'fine wine' for both service and conversation/interaction with guests.
• Demonstrated business/ commercial acumen in delivering business results

Opening hours of the venue will be Wednesday -  Sunday (Evenings)
