Job Description - Head Cook (Central Kitchen, Richmond, BC)

Company Introduction


T&T Supermarket Inc. was found in 1993 with two stores in BC.  Since then, it has expanded rapidly to become Canada’s largest Asian supermarket chain with 27 stores across the country: 12 in Metro Vancouver, 6 in Alberta, and 9 in Ontario (7 in GTA and 1 in Ottawa, 1 in Waterloo).


The Role


Reporting to the Central Kitchen Manager (or his/her delegate) or each stores Department Head, the Head Cook is responsible for managing, disciplining, providing guidance and training of Kitchen Deli Production staff at the assigned store or Central Kitchen.  The Head Cook is also responsible for the production of the assigned products (BBQ, Hot Food, Dim Sum, Sushi and Other Finished or Semi-finished Products) based on orders received, quality control, inventory and wastage as well as supervising the team to ensure daily kitchen food production and working conditions are complied to HACCP, corporate policies and other statutory requirements.


Major Responsibilities



  1. Manage the Central Kitchen or Kitchen Deli store production processes and its overall working environment

  2. Responsible for managing the team’s performance, execute disciplinary actions, and provide specialty training to the team in his/her assigned area

  3. Monitor production efficiency and evaluate the productivity level during work in progress

  4. Based on orders received, prepare, handle, clean, cut, marinate and cook the right quantity of foods for the assigned section, which includes but are not limited to BBQ, Hot Food, Dim Sum, Sushi and Other Finished or Semi-finished Products

  5. Ensure recipes, ingredient specifications, quantity, quality, cooking time as stated in the SOPs are being executed

  6. Ensure proper receiving is done; perform quality and inventory checks and wastage control

  7. Manage product quality, food safety, freshness and ensure FIFO is strictly practiced within the department

  8. Ensure that food is properly stored and handled at all times by ensuring all temperature records are  properly completed

  9. Responsible for the cleanliness, hygiene, equipment and tools maintenance and workplace safety; ensure garbage, recycled materials and other disposable items are handled timely and properly

  10. Develop and launch products for special events to create customer’s excitement

  11. Perform any other duties as assigned by the superior(s)


Knowledge, Skills and Ability Requirements

  4. Possess a positive, proactive, self-motivated work attitude

  5. Good attendance record, comply with company’s rules and regulations

  6. Possess knowledge, skills and experience in making Kitchen Deli products (BBQ, Hot Foods, Dim Sum, Sushi and/or others Semi-finished Products)

  7. Possess knowledge in workplace health & safety and food safety (Food Safe Certification requires)

  8. Have knowledge and experience in supervising Kitchen Deli production workflow and controlling cost and wastage

  9. Ability to manage and train employees

  10. Ability to deliver Kitchen Deli products (BBQ, Hot Foods, Dim Sum, Sushi and/or others Semi-finished Products) research and development

  11. Possess 5 years and/or above relevant experience, with at least 3 years of supervisory experience preferred

  12. Good communication skills, ability to communicate in English, Chinese (Cantonese &/or Mandarin) an asset

  13. Flexible to work in various shifts, including weekdays, weekends, holidays, morning and evening hours

  14. Have a good understanding of tools & equipment relevant to the job and know how to interpret labels of merchandises

  15. Possess basic computer skills in MS Office
