Location: Deerfield Pub at Glen Arbour, Hammonds Plains

In the heart of Hammonds Plains, you will find the Deerfield Pub at Glen Arbour. The Deerfield Pub is a year-round, breakthrough high energy eatery with a split personality! Deerfield Pub boasts two themes: a cozy pub atmosphere in one space and a boisterous sports bar theme in another that is open year-round.


 


The opportunity:


 


As the Sous Chef you will assist the executive chef in managing kitchen operations, including food preparation, cooking and staff supervision. Our Sous Chef is responsible for assisting with recipe development, inventory management, ensuring food quality and safety standards, and overseeing kitchen staff training. The Sous Chef will step in to lead the kitchen in chef’s absence and contribute to the menu planning and cost control measures. They must possess strong culinary skills, leadership abilities, and the ability to thrive in a fast-paced environment.

  • Self-starter who can work independently and take initiative.

  • You can work in a fast-paced environment moving with a sense of urgency, while maintaining quality

  • 2-3 year of supervisory experience with proven experience as a cook

  • Excellent communication, both verbal and written

  • You’re organized, collaborative, a problem-solver, and always put the customer first.

Job Duties and Accountabilities: In addition to following Glen Arbour’s policies and procedures, job duties and responsibilities include, but are not limited to:


 


Essential Duties and Responsibilities (80%)


 



  • Responsible for the Kitchen Line

  • Sets up station and collects all necessary supplies to prepare menu for service

  • Serve menu items compliant with established standards.

  • Use food preparation tools in accordance with the manufacturer's instructions.

  • Closes the kitchen correctly and follows the kitchen checklist for stations.

  • Maintain a prepared, fresh, safe, and sanitary work area at all times.

  • Assists with all duties of other areas as assigned by the chef

  • Proper receiving and handling of delivery orders.

  • Make sure that storage areas are kept clean and organized at all times.

  • All tasks are carried out without delay in the most efficient way possible.

  • Communicate clearly and professionally with all members of staff, guests, and others at all times.


 


Management Responsibilities (20%)


 



  • Place orders effectively based on inventory control.

  • Coaches staff to perform to the highest level of expectations.

  • Assists the chef in administrative tasks such as tracking invoices, scheduling, monitoring labor based on business volume, recipe and menu development.

  • Assists the chef in hiring, orientation, training, retaining of employees.

  • Assists the chef in planning menus, events and functions.

  • General Cleaning and Maintenance

  • Work stations and equipment are cleaned immediately after use.
