Job Description - Sous Chef - The Dusty Boot Saloon & Dance Hall
We’re seeking a Sous Chef to join our team at The Dusty Boot! The Dusty Boot Saloon & Dance Hall — the home of fancy cocktails, cold beer, western grub, and live music. A dressed-up saloon in a dressed-down cocktail lounge, featuring weathered wood, warm leather, the glow of neon, and the sweet sound of boots on the dance floor. Enjoy bar games, cowboy karaoke, billiards, and a chef-driven menu. Saddle up and settle in — must be whisky-drinking age (18+). This position is part of a shared kitchen team supporting both The Dusty Boot and The Balkan Restaurant.

What You’ll Do:
Support the Chef de Cuisine in delivering high-quality food and exceptional guest experiences
Help lead and motivate the kitchen team, fostering a positive, efficient work environment
Maintain kitchen organization, cleanliness, and operational efficiency
Oversee food preparation to ensure consistency, quality, presentation, and standards are met
Ensure stations are properly stocked and ready for peak service periods
Manage inventory, ordering, and record-keeping while minimizing waste
Assist with food and supply ordering to meet operational needs, on time and within budget
Assist with training, coaching, and developing kitchen team members
Act as an ambassador for BHC by helping identify and hire great culinary talent
What You Have:
2-3 years culinary experience is required
Prior experience in a supervisory kitchen role is an asset
Food Safety and WHMIS certification required (we can help you get certified if needed)
Knowledge of kitchen training best practices and standard operating procedures
Ability to thrive in a fast-paced environment while staying calm under pressure
Strong leadership and teamwork skills with a collaborative mindset
Connecting with people and building trusting relationships comes easy to you
Strong interpersonal skills with the ability to build trust and rapport
