JOB DESCRIPTION
Reporting to the Chief Operating Officer, the Vice President of Food & Beverage is responsible for driving financial performance, service excellence, innovation, and consistency across catering, banquets, beverage, culinary, stewarding and retail food operations. This role ensures alignment with MTCC’s overall business strategy while maintaining exceptional guest experiences, strong employee engagement, and sustainable operational practices.
JOB RESPONSIBILTIES
Provide executive leadership and direction to all Food and Beverage divisions including Catering, Banquets and Beverage, Culinary. Stewarding, and Food & Beverage Administration, fostering a culture of accountability, collaboration, and continuous improvement.
Develop and execute the overall Food and Beverage strategic plan, aligning departmental goals with MTCC’s corporate objectives, customer service standards, and long-term business priorities.
Oversee the preparation, management, and delivery of annual operating and capital budgets for Food and Beverage. Monitor financial performance, forecasts, food and beverage costs, labour controls, and revenue targets to ensure fiscal responsibility and profitability.
Spearhead the digital transformation of F&B operations by leveraging data analytics, modern POS systems, and inventory management software (Momentus, Adaco) to optimize margins, predict consumption trends, and better serve our customers.
Ensure the consistent delivery of high-quality food, beverage, and service standards across all events, conventions, and internal operations, maintaining MTCC’s reputation for excellence and professionalism.
Provide leadership, coaching, and performance management to direct reports. Establish clear objectives, succession plans, and professional development opportunities for senior leaders and their teams.
Collaborate closely with Sales, Event Coordination, Finance, Human Resources, Health and Safety, and other internal departments to support seamless event execution and optimize client satisfaction.
Oversee menu development, beverage programming, and pricing strategies in collaboration with the Executive Chef, Director of Catering, and Director of Banquets & Beverage, ensuring innovation, market competitiveness, and adherence to food cost targets.
Ensure compliance with all regulatory requirements including health and safety, food safety, liquor licensing, labour agreements, and internal policies and procedures.
Act as a senior escalation point for complex client issues, service recovery, contract considerations, and operational challenges, ensuring timely and effective resolution.
Lead initiatives to improve employee engagement, service culture, and workplace safety, with a focus on measurable improvements year over year.
Collaborate with Human Resources on high-level labour relations strategies, fostering productive partnerships with union representatives to ensure operational flexibility while maintaining a motivated, compliant workforce.
Drive operational efficiencies and continuous improvement initiatives, including systems, processes, and technology practices across Food and Beverage operations.
Champion MTCC’s sustainability goals by developing industry-leading waste reduction programs, local sourcing partnerships, and carbon-conscious menu engineering.
Represent Food and Beverage at senior leadership meetings, planning committees, and key internal and external stakeholder forums, providing insight, reporting, and strategic recommendations.
Establish and maintain strong relationships with key suppliers, partners, and industry stakeholders to support quality, innovation, and cost effectiveness.
JOB SKILLS AND REQUIREMENTS
Over eight years of relevant experience in a similar position
Completion of a university degree or an equivalent combination of education and experience
Extensive knowledge of large-scale food and beverage operations, hospitality management, financial management, unionized environments, and high-volume event-based service delivery.
Strong leadership and people management skills, strategic thinking, financial acumen, negotiation, and the ability to balance operational detail with long-term vision.
Proficiency with enterprise systems related to event management, financial reporting, forecasting, and standard business applications (MS Suite, Momentus, Adaco, HRIS and Payroll systems such as UKG)
Demonstrated ability to lead complex operations, manage multiple priorities, make sound business decisions under pressure, and influence outcomes across diverse stakeholder groups.
