Position Summary

The Chef de Partie is responsible for the smooth day-to-day operation of a particular area of the kitchen, as assigned. They are responsible for ensuring food preparation of their station is the highest level of quality and appearance. The Chef de Partie will maintain exceptional menu knowledge and attention to detail ensuring food is prepared as directed. They will ensure timely delivery of food within their station, instruct personnel on the proper use of kitchen equipment to avoid damage and ensure the cleanliness of their work station according to Alberta Health standards. The Chef de Partie will provide support in establishing goals and objectives that focus on profit, product and people while creating positive encounters with guests delivering consistent, memorable world class experience.

Responsibilities of this role include, but are not limited to:

  • Ensures superior food quality and presentation in all venues
  • Leads and oversees the culinary activities within their assigned area of kitchen for events/venues/event components year round
  • Preparation of the highest quality foods, contemporary presentations of all food items and timely delivery of food within their station
  • Instructs personnel on proper use of kitchen equipment to avoid damage
  • Maintains exceptional menu knowledge and attention to detail to current menus
  • Attends daily meetings with culinary team to review upcoming events and recap past events to ensure all teams are synced
  • Assist with food planning/ordering as required
  • Supports the Calgary Stampede culinary team through the Grown Right Here featuring local suppliers, off premise events and partnerships with the SAIT culinary program
  • Assists leadership with market research on the latest trends, product and technology
  • Supports a work environment that promotes teamwork, performance feedback, recognition, mutual respect and employee satisfaction
  • Assists with onboarding and training for staff within their assigned kitchen area
  • Provides input into annual part time performance reviews
  • Supports food and labor costs by utilizing recipes, controlling the amount of food prepared for each event and supervising their culinary team
  • Provides input in scheduling and assigning staff within an assigned kitchen area for events, on a weekly or monthly basis
  • Assists in the monthly counting of food inventories

Qualifications

  • Minimum of 3-5 years of culinary experience required (hotel, catering and/or restaurant operations)
  • Minimum of 2-3 years of supervisory experience
  • Post-Secondary Certificate
  • Culinary graduate at a recognized post-secondary school
  • Alberta Food Safety Certification, Section 31
  • Capacity to work well under pressure, meeting production schedules
  • Ability to prioritize, organize and follow through as necessary
  • Ability to communicate with employees, guests and customers to provide excellent service
  • Excellent leadership and motivational skills
  • Clear thinker with the aptitude to analyze and resolve problems
  • Ability to work all stations in the kitchen effectively
  • Familiar with industry best practices
