Job Description - F&B Outlet Head Waiter

Mandarin Oriental, Costa Navarino is located on the southwest coast of the Peloponnese, one of the most unspoiled and breath-taking landscapes in the Mediterranean, and 45 minutes’ drive from Kalamata International Airport.

The beachfront resort is part of the sustainable resort destination of Costa Navarino, a well-established tourism destination which includes 3 other resorts. It comprises 99 guest rooms, including 48 pool villas, all with outdoor terraces and sea views, along with five restaurants and bars.

It is the mission and intent of this position that the incumbent will be responsible for the smooth running of each shift and to deliver service excellence.

Scope of position

To provide the highest level of service and professional excellence, being ever present in the operation ensuring the highest standards and to completely satisfy our guests during their meal experience.

Duties and Responsibilities

General responsibilities

  • To perform kind and generous service in always treating both guests and colleagues in a respectful manner while treasuring our colleagues as much as our delightful guests.
  • To attend pre-service briefings for daily updates, ensuring active and regular communication within the team and that all tasks are followed up efficiently prior to guest’s arrival.
  • Ensuring that the opening and closing of the outlet is organised. This includes making sure that there is always adequate mise en place, setting up the restaurant before the guest’s arrival and performing all duties related to the closing of the outlet.
  • Ensuring that all steps throughout the sequence of service are thoroughly followed and should there be any gaps or delay, to ask for help in a timely manner, so that the guest experience is not negatively impacted.
  • To understand and operate the POS system.
  • To ensure service and Back of House areas are always kept clean and work is conducted according to the MOHG standards of FLHSS.
  • To perform any other reasonable duties as required by Management.

Human Resources/ Colleagues

  • Ensure that positive working relations with non-Food and Beverage departments are fostered, always giving co-operation.
  • To ensure that you adhere to Mandarin Oriental Costa Navarino’s grooming, and appearance standards to reflect an image of professionalism and care.
  • To encourage proactive, efficient, and effective inter-departmental communication to promote a climate of teamwork and enthusiasm.
  • Understanding and anticipating the guests’ needs and acting upon it.
  • To ensure that guest satisfaction is monitored and where suitable, rectified throughout their meal experience.
  • To respond proactively to guest queries and to ensure appropriate action is taken, followed by effective communication with all relevant parties.
  • Listen to customer comments and complaints in a positive manner and relate immediately to the outlet management.
  • Ensure that all MOHG Pillars and LQE Standards are delivered accordingly.
  • To meet all LQA and Forbes service standards as required.

Health and Safety

  • To be aware of, and comply with, safe working practices as laid down in Company H & S Manual, as applicable to your place of work. This will include your awareness of any specific hazards at your workplace.
  • To be aware of, and comply with, safe working practices as laid down under FHLSS. This will include your awareness of any specific hazards at your workplace.
  • To be aware of and comply with local and relevant Food Acts.
  • To wear any appropriate protective clothing provided by or recommended by the Hotel.
  • To report any defects in the building, plant, or equipment according to the Hotel procedures.
  • To ensure any accidents to colleagues, guests or visitors are reported in accordance with Hotel procedures.
  • To attend 6 monthly statutory fire training and to be fully conversant with and abide by all rules concerning fire, health & safety.
  • Be aware of Fire safety plans.
  • Adhere to Safe&Sound procedures regarding Health & safety.
  • To attend any training deemed appropriate by the GM or your Head of Department.

Requirements

  • Minimum of 2 year working experience in a luxury hotel or high-end restaurant operation
  • To be willing to work a flexible schedule to accomplish all major responsibilities and tasks.
  • Must be a self-motivator and spread positivity within the team.
  • Must work in a safe, prudent, and organized manner.
  • Must be able to relate to all levels of Guests and management.
  • Can handle multiple tasks at one time.
  • Be able to consistently delight and satisfy our Guest.
  • Very good communication skills are essential.
  • Must have excellent attention to detail.
  • Local and international food and beverage awareness is a plus.
  • Very good command of spoken English.
  • Reading, writing and oral proficiency in Greek is a plus.
