  • To ensure that the Fire Life Health Safety and Security company standards and HACCP Standards are maintained and carried out. They must be monitored regularly to assist in scoring 100% on the MOHG health and safety audit.
  • To ensure that Mandarin Oriental, Macau’s grooming and appearance standards are implemented and maintained to reflect an image of professionalism and care.
  • The Chef de Partie influences the skills, knowledge, attitude, communication and team spirit of his assigned areas.
  • To carry out annual appraisals and regular feedback on development on all colleagues using the Mandarin Oriental Hotel Group Performance and Development System PROFILE.
  • Conduct inter kitchen communication meetings
  • Conduct technical knowledge and job skills training for all food produced within his area and the effective use of provided materials.
  • Create enthusiasm for training and development amongst his colleagues.
  • Motivates and leads by example.
  • Communication of food trends and market needs to his colleagues.
  • Communication of local requirements, food sanitation laws, safety regulations and other to all colleagues
  • Checks the quality of raw materials in his assigned areas, as well as their storage, handling and usage.
  • Conducts training on all related food preparations, hygiene and grooming standards in conjunction with the Sous Chef.
  • Keeps the Sous Chef informed about all aspects of assigned section, including equipment, working environment, staff problems and departmental relations.
  • Attends kitchen meetings in absence of the Sous Chef and counsels his colleagues if necessary.
  • To ensure that all kitchen Mise en Place is prepared according to production plan.
  • Assists Sous Chef in creating and developing new dishes and recipes by keeping up with the latest market trends.
  • To carry out checks of all refrigerators and freezers at least twice daily, for proper functioning and cleanliness.
  • To ensure constant rotation of all stocks in the kitchens.
  • To ensure highest standards of hygiene are always adhered to throughout food preparation.
  • Responsible for the cleanliness of respective section.
  • Ensure all equipment is being maintained and cleaned regularly.
  • Always keep work stations clear, clean and tidy.
  • Ensures Mise en Place is always done according to Legendary Service Training and meets with Sous Chef daily to plan daily Food & Beverage activities.
  • Assist in other food production areas as and when required.
  • Actively participate in all training activities.
  • Ensure full co-operation and good relationship with all other service colleagues and departments.
  • Participate and serve guests during outside catering as and when assigned.
  • Performed any other duties as required by the Executive Sous Chef, Chinese Executive Chef from time to time.
  • Responsible for the quality of food served in his kitchen area.
  • Assist the Chef de Cuisine in conducting weekly inspections of kitchen and restaurant with recorded follow-ups.
  • Assist the Chef de Cuisine with planning, co-ordination and supervision of all menu implementations.
  • Assist in the preparation and control of daily and weekly market lists.
  • Constantly strive to improve kitchen-operating procedures.
  • Propose and initiate when approved, new services and products for our guests.
  • Perform any other reasonable duties as required by the department head from time to time.
  • Assist in creating and developing new dishes and recipes by keeping up with the latest market trends.
  • Relate guest comments, positive or negative, to the Chef de Cuisine.
  • Ensure accountability for your actions and recognize that any unauthorized deviation from the information security policy may result in disciplinary action including termination of employment and prosecution under the applicable Macau law.
