JOB DESCRIPTION: - CORPORATE CHEF OBJECTIVE To direct & guide the Food Production team in providing a consistent quality of food & beverage. in all outlets, as per international standards, in order to achieve the maximum level of guest. satisfaction and organizational profitability in an atmosphere of high employee morale. KEY RESPONSIBILITIES • Identifies and develops new products and equipment, to enhance product quality. • Develops and defines quality standards of food preparation and presentation. • Defines the organization of work within the department including assignments, time schedules and vacations of staff. • Ensures the quality of food preparation and presentation, as per organizational standards. • Ensures availability of stock & raw ingredients by proper planning and co-ordination with Purchase & Stores. • Co-ordinates with the Engineering department to carry out Preventive Maintenance Program in kitchens. • Establishes recipes and methods of preparation, informs the F&B Director of significant change in prices affecting the preparation of menu items. • Recommends menu pricing in co-ordination with Director F&B / F&B Manager / F&B Controller / Banquet Manager. • Responsible for the hygiene & cleanliness of the kitchen areas, equipment & staff. • Ensures compliance with company and hotel policies department employees. • Constantly monitors key performance indicators for the department and takes appropriate action. • Analyses and monitors costs, (material, energy and staff) to ensure high profitability on a regular basis and initiates corrective action whenever necessary. • Ensures that menus are changed on a regular basis, as per corporate guidelines and market need, in co-ordination with F&B Manager/ Director F&B. • Ensures the best quality of raw material is procured & used in food preparation. • Prepares capital & operational budget to achieve desired profitability. • Ensure storage of raw & cooked food/ raw material is as per international standards. • Keeps oneself updated with market knowledge & trends by conducting regular market surveys, in co-ordination with the Purchase Department. SKILLSET REQUIRED: Education • Graduate/Post-graduate Diploma in Hotel Management / Business Management. Experience • Minimum experience of 15-20 years in Catering/hotel or any other related/relative Industry. Successful progressive background in catering, Working within a customer focused environment, Good craft skills, good working knowledge of Food Safety, Health & Safety and Allergens, Awareness of Safeguarding requirements and good practice. • Familiarity with diverse business functions such as marketing, PR, finance, Projects, etc.
