Due to an increased level of business, we are currently looking to recruit an energetic, motivated and service driven Chef de Partie to join our kitchen team.

The successful candidate will be reporting to the General Manager and the Head Chef and will support the Head Chef in the efficient running of the kitchen ensuring that the preparation and presentation of the food complies with company & HACCP standards.

MAIN DUTIES AND RESPONSIBILITIES

• To arrive to work in time and in full uniform.
• To adhere to all HACCP regulations regarding uniform, personal hygiene, food preparation, production, service and storage.
• To carry out daily and weekly procedures, including temperature checks, food labelling/dating and storage
• To work with the head chef in menu planning and participate in the development of daily specials and new menu items.
• To support the Head Chef with the implementation of stock controls, the importance of good stock management, and how this enables the kitchen to meet gross profit
• To ensure that all mis en place is freshly prepared and on time for service
• To ensure that dishes are prepared to the correct recipe and to the highest standard
• To ensure that all stocks are kept under optimum conditions and proper rotation is adhered while in refrigeration.
• To minimize food waste and ensuring that any food waste is disposed of correctly.
• To ensure all dishes are served with correct garnish, portion size.
• To ensure that your section is kept clean and tidy at all times with a full clean down of the section after service at the end of a shift.
• To observe all Health and Safety and Covid 19 rules and to ensure that safety of yourself, guests and work colleagues
• Liaise with head chef and sous chef for daily briefings
• Organise your station for a busy service and deliver a consistent quality product at speed

The ideal candidate must have the below requirements:

• Relevant previous experience have a good knowledge of different cooking processes
• A minimum of 2 years experience as a Chef de Partie is preferable
• Display a keen interest in their own professional culinary development
• Be flexible and available to work weekends
• Good interpersonal skills and must work well in a team
• Level headed with a proven ability to work under pressure
• Chef qualification desirable
• Sound knowledge and passion for food handling, food standards and presentation
• Thorough knowledge of HACCP
• Fluent English
