Job Description - 2nd Chef Manager

Rathborne Nursing Home is a nursing home set in beautiful grounds in Ashtown, Dublin 15 and is part of Trinity Care Group, a well-respected, multi-award-winning Nursing Home Group, part of the international DomusVi Group.

We provide private residential, convalescent, and rehabilitative care in our purpose-built Nursing Homes. We have centres in Dublin, Meath, Louth, Kildare, Kilkenny, and Cavan. We are currently looking to recruit a Registered General Nurse to care for our elderly residents.

Overall Objectives: To provide a professional catering service, ensuring that company standards are maintained and that Resident expectations are met in a 24/7

 

Specific Responsibilities:

  • To plan, prepare, cook and present food to the standards required by the company and the client.
  • To set objectives and be responsible for the day to day running of the kitchen, including supervising the recruitment and selection process to ensure that
  • it effectively meets the need of the location.
  • To maintain very high hygiene standards throughout the operation.
  • To maintain all HACCP records and related documentation.
  • To liaise professionally with external auditors and government organisations such as the HSA and HIQA.
  • To work within the budget for the location with a key emphasis on daily cost per resident.
  • To monitor the work of the location team and carry out appraisals ensuring that information is filed appropriately, with development plans that are actively used.
  • Be available to work 2/7

Resident Service:

  • To ensure that Residents are given a prompt and efficient service and expectations are consistently exceeded.
  • To regularly monitor Resident feedback and produce a suitable action plan based on the results.
  • To be customer focused at all times by being visible during service periods, approachable and quick to exceed expectations in fulfilling customer needs.
  • To ensure all food is cooked, presented and served in line with company standards.
  • To ensure any specialised diets are delivered as requested.
  • To ensure that all agreed service objectives are met in line with Resident and Company expectations.

 

Health & Safety, Food Safety, the Environment:

  • To ensure that the location meets statutory and company requirements of Health and Safety, Food Safety and Environmental legislations and procedures.
  • To conduct Food Safety and Health and Safety Risk Assessments and ensure that all standards and procedures with regards to Hygiene and Safety are established and maintained in line with the company manual.
  • To record and report all accidents within the location, adhering to location and company procedures.
  • To ensure all equipment is well maintained and is in good working order.
  • To ensure that all company procedures and work instructions are fully understood and practiced by all employees.
  • To attend all health and safety training courses as required.
  • To promote and encourage environmental improvement initiatives as appropriate within the business
