Purpose of the Role


As Sous Chef, you play a key leadership role in supporting the Head Chef in the smooth, efficient, and inspired running of the kitchen and all related areas — including the staff canteen and delivery bay. You lead with Care, looking after your team and guests alike. You bring Energy & Drive to maintaining the highest culinary standards, always using approved ingredients in a cost-effective manner. You Do the Right Thing by upholding the highest standards in hygiene, health & safety, and food preparation — ensuring full compliance with HACCP regulations. And above all, you lead with a mindset of Always Getting Better, constantly improving systems, menus, and team development.

Key Responsibilities


People & Leadership – Leading with Care and Integrity



  • Ensure all kitchen and stewarding team members arrive in full uniform, with a focus on presentation and pride.

  • Supervise and support all back-of-house team members, ensuring respectful and positive work culture.

  • Be a role model for high standards of personal hygiene and professionalism at all times.

  • Promote a safe, inclusive, and collaborative kitchen environment where everyone is respected and supported.


Operational Excellence – Driving Standards with Energy



  • Assist the Head Chef in managing kitchen operations efficiently, ensuring food is produced to the highest standard and served promptly.

  • Ensure all deliveries are checked for quality, with discrepancies recorded responsibly.

  • Maintain HACCP compliance and enforce rigorous hygiene, health, and safety protocols throughout all food production and storage areas.

  • Actively monitor food GP% and help implement cost-effective stock management practices.

  • Oversee the preparation, presentation, and quality of all dishes – ensuring they meet or exceed company standards.


Team Development – Always Getting Better



  • Support the Head Chef in onboarding, training, and mentoring all new and existing kitchen staff.

  • Ensure that every team member receives consistent standards training (including daily 15-Minute Training).

  • Promote a continuous improvement mindset in all kitchen operations, encouraging innovation and feedback from the team.

  • Assist in preparing rosters, ensuring staffing levels are appropriate and aligned with business needs and budget targets.


Collaboration & Communication – Doing the Right Thing, Always



  • Communicate clearly with other departments, including Human Resources and Maintenance, ensuring operational issues are addressed promptly and respectfully.

  • Lead by example in complaint handling — ensuring all guest or team concerns are managed with empathy and professionalism.

  • Ensure all hotel policies and procedures are adhered to, including sign-in/out, breaks, and disciplinary protocols.

  • Support a fair and structured work environment where all team members feel heard and valued.


Financial Awareness & Accountability



  • Assist in the preparation and control of departmental budgets to maximize efficiency and profitability.

  • Ensure timesheets and wage-related reports are submitted accurately and on time.

  • Monitor waste, stock rotation, and ensure all ingredients are used efficiently.


Flexibility & Teamwork



  • Embrace cross-functional teamwork, supporting other departments as required to ensure the smooth operation of the hotel.

  • Stay agile and positive in adapting to the day-to-day needs of the business, even when challenges arise.
