Collegio alla Querce, Auberge Collection, is a former cultural institution and much-beloved boarding school that went through extensive transformation to awaken the property’s storied and romantic history, dating back to the 16th century. Auberge’s third out four currently open European destinations, Collegio is a delight for design lovers and gourmands alike. Three adjacent original buildings feature 83 rooms, an original chapel and theater, a library, two restaurants and a bar which was once the school’s principal’s office. Surrounded by old growth cyprus and soaring oak trees, the resort’s grounds boast expansive lawns, five levels of terraced Baroque gardens, a pool and garden bar and restaurant. Job Description

At Auberge Collection, we believe that exceptional dining is an art form—rooted in attention to detail, heartfelt service, and authentic hospitality. As a Chef de Rang, you will play a key role in shaping memorable dining moments, ensuring every guest feels valued and cared for through refined, seamless service.

Please note that this is not an exhaustive list of everything that needs to be done! Within the Auberge family, our people always find new ways to look after the business, their guests, and their team members. Within this, the key responsibilities for this position are:

Guest Experience & Service Excellence

  • Facilitate the guest dining experience by taking orders, anticipating needs, and ensuring timely and accurate delivery of all items.

  • Build genuine connections with guests to ensure satisfaction, offering attentive and personalized service throughout their meal.

Menu Knowledge & Upselling

  • Comply with Auberge Resorts Collection service standards, while thoughtfully suggesting unique menu items to enhance the dining experience.

  • Demonstrate in-depth knowledge of food and beverage offerings, providing informed recommendations with confidence and grace.

Order Management & Accuracy

  • Accurately take and place guest orders, promptly input them into the POS system, and manage billing with precision.

  • Ensure clear communication with kitchen and bar teams to maintain smooth service flow.

Operational Excellence & Cleanliness

  • Operate, maintain, and clean restaurant equipment and fittings in accordance with safety and hygiene standards.

  • Ensure the restaurant and outlets remain tidy, organized, and in full compliance with safe food handling procedures.

This role is an invitation to elevate dining into an unforgettable experience. As a Chef de Rang, you will combine efficiency, elegance, and passion for service to embody the essence of Auberge hospitality.

Qualifications

Education & Experience

  • Minimum of two years of experience in the foodservice or hospitality industry required.

  • Prior experience in a luxury hospitality property highly recommended.

Skills & Knowledge

  • Good knowledge of food and wine, with the ability to provide thoughtful recommendations to guests.

  • Superior professional appearance, polished manner, and strong interpersonal skills suited to a fast-paced team environment.

  • Fluent in English, both spoken and written. Additional languages are considered an advantage.

Availability

  • Ability to work a flexible schedule, including weekends and holidays, according to departmental needs.
