Main duties:

The Executive Pastry Chef is responsible for develop the pastry concepts for the Milan Outlets together with the Culinary Director and the local Kitchen Teams to elevate the current dessert offering especially regarding its quality and the brands unique identities.

* Prepares each outlet desert offering and seasonal recipes.
* Develop, design and create new ideas and items for pastry kitchen.
* Create new and exciting desserts to renew menus and engage the interest of customers.
* Ensure excellent quality throughout dessert offerings.
* Follows proper handling and right temperature of all food products.
* Decorate pastries and desserts and ensures the food presentation will be beautiful and exciting.
* Supervise and coordinate all pastry and dessert preparation and presentation.
* Ensure guidelines on food cost control and stockings are followed.
* Check quality of material and condition of equipment and devices used for cooking.
* Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervise immediately.
* Observes compliance with the companys policies and procedures, as well as governmental laws and regulations.
* Attends food seminars and exhibitions.
* Performs other duties pertinent to this job as assigned.
* Communicates professionally with all team.
* Communicates report and kitchen operational issues with Superior and Director of Operations.
* Works closely with subordinates to ensure information transmission at all times.

Knowledge, Skills, and Experience:

- Certified Culinary Arts Diploma or similar.
- Minimum 3 years as Pastry Chef/Senior Pastry Chef.
- Good knowledge of different types of pastries and desserts.
- Prior management experience in a similar kitchen environment.
- Good in English and Italian.
- Excellent knowledge of kitchen policies and procedures, their development and applications.
- Excellent knowledge of Food Safety, HACCP, Sanitation, and Personal Hygiene basics.
- Ability to maintain high quality control standards.
- Ordered and systematic in work.
- Excellent interpersonal, communication and management skills.
- Strong planning and budgetary skills.
- High coaching skills are a must in order to maintain the positive and supportive role with the kitchen teams.
- Highly cooperative team spirit.
- Excellent leadership skills and the ability to lead by example in a multicultural environment.
- Problem-solving skills.

Work Specification:
Full-time based on shift (day, evening or if required half day and half evening).
Location: in person
Shift work (daytime, evening, occasionally broken).
5 days out of 7.

• Language required: Italian. English is a plus
