Splendido, A Belmond Hotel, part of the LVMH Group, is an emblem of Portofino’s allure. Our elevated escape is perched in the protected Portofino hills, overlooking the glittering Gulf of Tigullio and charming Portofino. We are proud of our legendary past and continue to visualise our heritage of the future. From La Terrazza - one of the most spectacular restaurants in Italy - to our Pool Grill Restaurant and Cocktail Bar, culinary excellence is in our DNA.  

For the next season, we are looking for a Sous Chef to join the team at our refined La Terrazza Restaurant and at the Pool Grill Restaurant. 

The ideal candidate is passionate about hospitality and comfortable with challenges. 

He/she should have exceptional taste and exemplary customer service skills. The primary objective is to provide a friendly, attentive, and timely service and to create an exceptional experience for all our guests.  

He/She reports to Executive Chef. 

 

Main duties & responsibilities: 

  • Assisting the Executive Chef in managing the kitchen brigade and in creating and preparing menus; 
  • Coordinating food production and controlling food quality, taste and presentation of dishes; 
  • Ensuring adherence to all health, safety and security procedures; 
  • Collaborating with all F&B departments: Restaurant, Banqueting, Room Service, Bar; 
  • Compliance with quality and service standards. 
  • Effective communication, emotional intelligence and adaptability; 
  • Strong leadership skills; 
  • Global perspective: treat one another with respect and inclusiveness regardless of position, level or background; 
  • Flexibility regarding hours is essential, including willingness to work weekends, holidays and evenings; 
  • Ability to work under pressure; 
  • Strong motivation and passion for the job with the ability to adapt to a dynamic and challenging environment; 
  • Minimum 3 years experience in the same role in a fine dining restaurant; 
  • Fluent in Italian. Basic level of English preferred; 
  • Outstanding leadership skills; 
  • Flexibility and excellent efficiency in working under pressure. 
  • We offer seasonal Labour contract according to C.C.N.L. Settore Turismo - Level 3,  Sous Chef; 
  • Start date: April/May 2026 to End date: November 2026, with the aim of a continuous collaboration over subsequent seasons at Splendido and a career path; 
  • Monthly gross salary based on seniority and skill level + separate payslip for 13°,14° and TFR; 
  • Welfare incentive based on quality goals;   
  • Accomodation in double room our staff house including breakfast; 
  • Bus ticket as benefit for the contract period;  
  • Staff cantine;
