Sushi Chef

We are seeking a talented and experienced Sushi Chef to join our culinary team. The ideal candidate will have a deep passion for Japanese cuisine and expertise in crafting high-quality sushi dishes. You will be responsible for preparing a variety of sushi, maintaining the sushi bar, and ensuring the highest standards of food safety and presentation.

Key Responsibilities:

• Prepare and present sushi dishes, including sashimi, nigiri, maki, and specialty rolls, following traditional and contemporary techniques.
• Manage the sushi bar, ensuring cleanliness, organization, and compliance with health and safety standards.
• Select, prepare, and cut fish and other ingredients to maintain the highest quality and freshness.
• Collaborate with the Head Chef and culinary team to develop new sushi menu items and specials.
• Maintain inventory of sushi ingredients and communicate ordering needs to the Head Chef or Restaurant Manager.
• Ensure consistency and excellence in every dish served to our customers.
• Train and mentor junior kitchen staff in sushi preparation and techniques.
• Assist with other kitchen duties as needed, including food prep and cleaning.

Qualifications:

• Proven experience as a Sushi Chef or similar role in a high-volume restaurant.
• Extensive knowledge of sushi preparation, including rice cooking, fish cutting, and rolling techniques.
• Strong understanding of food safety and sanitation practices specific to raw fish and seafood.
• Excellent knife skills and attention to detail.
• Ability to work efficiently in a fast-paced environment.
• Strong communication and teamwork skills.
• Culinary degree or relevant certification is a plus.
• Passion for Japanese cuisine and a commitment to delivering exceptional dining experiences.
• Flexibility to work evenings, weekends, and holidays as required.

Preferred Qualifications:

• Experience with Japanese cuisine beyond sushi, such as tempura, yakitori, or other traditional dishes.
• Creative approach to developing new sushi recipes and menu items.
• Strong organizational skills and the ability to multitask.
