Job Description - Nutrition Director

As the Director, Nutrition & Operational Support Services, you will provide nutrition and operational support for the East Region of the country. This includes leading the East Region with nutrition and operational support relative to sales and operations to meet client and operational needs, championing the execution of the LOB Quality Assurance and Operational Excellence program and food service production software system, as well as acting as the liaison between Supply Chain Management and field operations. You will act as a Region leadership team member in all aspects of activities with the Regional Vice President/VP Operations, Regional Finance Director and Human Resources Director. This role provides strategic leadership and technical and tactical support as an expert for client inquiries, and provides professional information for both our clients and Aramark. You will provide training and development to senior, regional and district leadership in areas of nutrition and operational expertise. The Director provides strategic input to the Region and leadership team to continually evaluate the Corrections industry, anticipating future trends accurately to create competitive strategies and plans for the LOB. You will recommend, as appropriate, development and succession planning for members of the LOB team.

Job Responsibilities

Leads the Manager, Nutrition & Operational Support Services to provide support to the Region. Identify and communicate key responsibilities and practices to motivate team member. Activities related to the department personnel include talent acquisition, training, development, management and budget planning.

Provides leadership for the nutrition-related areas of sales opportunities. Participates in large or complex surveys, bidder?s conferences, and sales presentations. Customizes programs based on specifications and unique client needs. Provides accurate food cost data for all of the types of meals required for each bid. Develops all required nutrition related proposal information. Reviews the proforma for accuracy.

Develops a strong level of trust and credibility with clients regarding the technical nutritional competency of Aramark Correctional Services. Ensures that clients are aware of current applicable nutrition-related government regulations, industry trends and provides assistance in input as needed.

Provides technical expertise in operational menu planning for the Region for regular, therapeutic, religious and juvenile nutritional needs. Requires an understanding of current applicable nutrition-related government regulations and current nutrition research knowledge for application to meet client needs. Considerations for every opportunity include balancing budgetary restraints with nutritional requirements and client specifications.

Assists in the development of the Operational Excellence productivity standards for the LOB, in conjunction with Operations and the VP Nutrition and Operational Support Services, to ensure contract compliance standards, compliance to food cost targets, American Correctional Association (ACA) accreditation where applicable, and USDA compliance for juveniles.

Provides leadership within the Region to support the execution of ACS operational standards through development of tools and training. Will trouble shoot for large or complex facilities for adherence to standards.

Provides leadership for the Region related to Supply Chain Management (SCM). Acts as the liaison to the field operators and SCM for procurement and distribution. Supports the execution of processes to ensure compliance with purchasing programs. Assists in the testing of products and input as needed to determine appropriate product usage for the LOB.

Utilizes operational food production software system designed for ACS to assure contractual compliance with standards. Accurately computes all menu costs for sales opportunities as well as on-going menu revisions to meet client needs. Provides leadership to ensure appropriate execution of program within LOB.

Reviews Region operational account compliance with LOB standards and programs, including food cost targets and execution. Provides strategic and tactical input to Region operational leadership team to improve short and long term performance. Works in conjunction with District Managers and Front Line Managers for adherence to food cost targets.

Identifies Regional training opportunities in the areas of nutrition and operational support, quality assurance, and food cost control. Develops tools and training to assist sales and operations. Works with Training Director to design and deliver necessary program content for all levels of management.

Provides strategic input to leadership team to identify and define current industry trends related to nutrition and operational programs. Anticipates future trends accurately to create competitive strategies and plans for the LOB.

Reports directly to Regional Vice President. Travel requirement of 40% within the region

Qualifications

Bachelor Degree with American Dietetic Association registration as a Registered Dietitian (successful completion of internship program, satisfactory score on exam, plus fulfillment of continuing education requirements), plus a minimum of five years relevant experience.

Licensed Registered Dietitian

Previous leadership and management experience is required. Operational experience is recommended.

Ability to lead, execute programs, work effectively with others and manage personnel.

Ability to build strong relationships and effectively communicate with clients, multiple levels of management, sales, operations and support staff.

Proficient in Microsoft Excel, Word and PowerPoint.

Ability to travel 40-50%

Ability to accurately and efficiently utilize a web-based food production system
