Geographical retail leader for concessionaire operations. He/She is the overall responsible for store sales and bulk orders.
Job Responsibilities/Roles
Inventory Monitoring
Executes weekly and monthly inventory count. Reports weekly inventory variance report per store in his/her area.
Delivery Monitoring
Reports served and unserved orders, plant vs. actual weight received. Reports Bad/Off Quality items. Rejection of delivery if near expiry.
Observed and implement FIFO.
Sales Monitoring (Pork, Beef and Marinated)
Sales per customer (Bulk buyer if there's any). Monitoring of Low Value sales.
Transformation of Items
Ensures daily record of primal transformation.
Submits daily transformation report to Inventory Team.
Checks cutting loss per detailed cuts.
Establish standard cutting loss per Primal Cut.
Ensures primary primal are transformed to high value sub primal or detailed cuts.
Stocks Monitoring
Ensures product availability. Must maintain superior appearance of store and current displays.
Weekly Sales and Operational Highlights
Recommends area plans and programs per store to retail Sales and Operations Manager.
Reports competitor initiatives and pricing.
Ensures Good Manufacturing Practices are observed and implemented per store.
Maintains proper cleanliness of store and stock areas
Scheduling, time card check off, managing OT
Education:
College Degree or at least High School Graduate
Experience:
Minimum 5 years of meat retail experience
COMPETENCIES REQUIRED:
Excellent meat product knowledge
Butchering Skills
Punctual, reliable and eager
Positive attitude and work ethic
ability to communication, direct staff, delegate and follow up
