A Sous Chef, will work closely with theExecutive Chef to manage aspects of the kitchen to deliver anexcellent Guest and Member experience. A Sous Chef will also berequired to manage food provisions, assist with guest queries, andcontrol costs. Specifically, you will be responsible for performingthe following tasks to the highest standards: • Manage allaspects of the kitchen including operational, quality andadministrative functions • Manage the provision of food toFood and Beverage outlets and taking action where necessary toensure compliance with current legislation • Assist inpositive outcomes from guest queries in a timely and efficientmanner • Ensure foods are of good quality and storedcorrectly • Contribute to menu creation by responding andincorporating Guest feedback • Ensure the consistentproduction of high quality food through all hotel food outlets• Manage customer relations when necessary, in the absenceof the Executive Chef • Ensure resources support thebusiness needs through the effective management of workingrotations • Support brand standards through the trainingand assessment of the Team • Manage the kitchen brigadeeffectively to ensure a well-organized, motivated Team •Control costs without compromising standards, improving grossprofit margins and other departmental and financial targets• Assist other departments wherever necessary and maintaingood working relationships • Comply with hotel security,fire regulations and all health and safety and food safetylegislation • Report maintenance, hygiene and hazardissues • Be environmentally aware
