Butcher CDP - Saudi Arabia Event

A well-established hospitality and F&B company in Riyadh is looking for a skilled Butcher Chef de Partie (CDP) to join its kitchen team, responsible for meat preparation, portioning, and quality control across a busy multi-outlet operation.

Its a 6 months contract for Riyadh Season Event. 

Responsibilities

• Break down, trim, and portion various cuts of meat and poultry to recipe and quality specifications


• Maintain the butchery section's cleanliness, organization, and compliance with food safety standards (HACCP)


• Monitor stock levels of raw meat products, coordinating with the kitchen team on ordering and rotation (FIFO)


• Ensure consistent quality, weight, and presentation of cuts across all outlets served


• Work closely with chefs de cuisine and sous chefs to meet daily prep requirements and menu specifications


• Sharpen and maintain butchery tools and equipment


• Guide and support junior kitchen staff (commis) assigned to the butchery section


• Minimize waste through proper cutting techniques and portion control


• Follow all hygiene, safety, and cold-chain storage procedures for raw meat handling

Requirements

• Minimum 2–3 years of experience as a butcher or butchery CDP in a hotel, restaurant, or large-scale F&B operation


• Strong knowledge of meat cuts, grades, and preparation techniques across beef, lamb, poultry, and other proteins


• Working knowledge of food safety and hygiene standards (HACCP)


• Ability to work efficiently in a high-volume, fast-paced kitchen environment


• Good physical stamina; comfortable working in cold storage areas


• Conversational proficiency in English


• Willingness to work rotating shifts, including weekends and holidays
