Job Summary:

As the Executive Chinese Chef, you will assume responsibility for the control and preparation of all items associated in this Fine dining restaurant, Chinese banquets, and Asian cuisine featured in the hotel. Reporting directly to the Executive Chef, you will lead a team of culinary professionals in delivering exceptional dining experiences that reflect the essence of Hotel's brand culture.

Key Responsibilities:

• Manage all operations during meal periods at The Client's restaurant, ensuring seamless service and exceptional guest experiences.
  


• Maintain an active presence in the restaurant during operating hours, soliciting and responding to guest feedback to continuously improve service quality.
  


• Exemplify and reinforce the guiding principles and core values of the Restaurant in all aspects of culinary operations.
  


• Implement sustainable practices to reduce waste of supplies and materials, promoting reuse or sale where applicable.
  


• Attend scheduled trainings, conduct or attend briefings, and coordinate with outlet managers for daily events and special functions.
  


• Regularly communicate with kitchen staff through one-on-one counseling sessions, fostering a culture of open communication and continuous improvement.
  


• Adjust production levels according to projected covers and function sheets, ensuring efficient use of resources.
  


• Oversee the preparation and maintenance of recipe cards to maintain consistency and quality in all dishes served.
  


• Collaborate with the Executive Chef and Director of F&B to propose new menu items and review existing menus and cycles regularly.
  


• Develop and implement kitchen staff schedules to optimize productivity and ensure smooth operations.

Requirements

• Minimum of 5 years of experience in a similar capacity, with a strong background in Chinese cuisine and banquet preparation.
  


• Exceptional leadership and mentoring skills, with the ability to motivate and manage a diverse team.
  


• Excellent organizational and time management abilities, capable of working well under pressure and meeting tight deadlines.
  


• Sensitivity to guests and team members' needs, with a focus on delivering personalized service.
  


• Self-motivated and proactive, displaying initiative in problem-solving and innovation.
  


• Must have experience in High End Chinese cuisine restaurants
