Production Manager_Bakery (Buns, Breads, Rolls, Bakery)

We're looking for an experienced Production Manager to lead our bakery manufacturing operations

Responsibilities:

Production Operations Management

• Manage end-to-end production activities across bakery manufacturing lines including mixing, forming, baking, cooling, slicing, packaging, and dispatch preparation.


• Ensure daily production targets are achieved as per production plans, customer demand, and quality standards.


• Develop and implement production schedules in coordination with Planning, Supply Chain, and Sales teams.


• Monitor production performance, identify bottlenecks, and implement corrective actions to improve output and efficiency.


• Ensure smooth production flow with minimum downtime and maximum equipment utilization.


• Lead continuous improvement initiatives to enhance productivity, capacity, and operational efficiency.

Production Planning & Cost Control

• Prepare manpower and resource plans to meet production requirements.


• Monitor production costs including labor, raw material consumption, energy usage, and operational expenses.


• Drive initiatives to reduce production losses, waste, and rework.


• Monitor key production KPIs such as:




• Production output


• Yield performance


• Waste percentage


• Downtime


• Labor productivity


• Overall Equipment Effectiveness (OEE)

Quality & Food Safety Compliance

• Ensure strict compliance with food safety standards including HACCP, GMP, ISO 22000, and Saudi Food and Drug Authority (SFDA) requirements.


• Work closely with Quality Assurance teams to maintain product consistency and compliance.


• Ensure adherence to hygiene, sanitation, allergen control, and traceability procedures.


• Support internal and external audits and ensure timely closure of corrective actions.

Maintenance & Equipment Coordination

• Coordinate with Maintenance teams to ensure preventive maintenance schedules are followed.


• Minimize production interruptions through effective troubleshooting and root cause analysis.


• Support installation, commissioning, and optimization of new production equipment.


• Ensure proper handling and operation of bakery machinery.

Cross-Functional Collaboration

• Collaborate with:




• Quality Assurance for product standards and food safety


• Maintenance for equipment reliability


• Supply Chain for material availability


• Warehouse for inventory control


• R&D for new product trials and process improvements


• HR for manpower planning and employee development




• Participate in factory improvement projects and operational excellence programs.

Qualifications & Experience

• Bachelor’s degree in Food Technology, Bakery Technology, Industrial Engineering, Manufacturing Engineering, or related field.


• Minimum 8–12 years of experience in industrial bakery manufacturing, FMCG, or food production environment.


• Minimum 5 years of experience managing large-scale bakery production operations.


• Strong experience with high-volume bakery products such as:




• Buns


• Rolls
