Responsibilities
• Prepares and posts daily work assignment sheets • Assigns cooking or food preparation tasks to lower level cooks • Ensures food is prepared according to standard recipes and practices • Instructs staff in proper food preparation techniques • Extends recipes to facility population requirements • Fills pre-preparation and inventory pull sheets before every meal • Orients and trains program for inmate workers • Sticks to sanitation and safety program • Conducts administrative and human resource management functions • Oversees food preparation for adherence to quality standards
Requirements
• Minimum seven years' experience • Ability to do bulk cooking for wedding catering • Good communication skills • Knowledge of food safety and sanitation • Experience in preparing a variety of foods • Ability to use kitchen equipment in large quantity food production
