Requirements

• Diploma or Degree in Hospitality from a recognised establishment (Essential)
• At least 3 years’ experience in a 4/5* Restaurant/ Cocktail Bar- 2 years in a supervisory role in F&B (ESSENTIAL)
• Computer /Administration skills- Microsoft Office- Word, Excel Outlook. Operating POS systems- Micros and OPERA beneficial. Stock Management systems- FnBShop Beneficial.
• Extremely professional and well presented with solid English Language skills on a verbal and written level.
• Well versed in F&B trends and terminology in the beverage sector-Can make solid recommendations to customers. Knowledge on local wines and spirits beneficial
• Excellent knowledge of the highest level of customer service in a luxury environment
• Good knowledge and understanding of stock procedures and control
• Good knowledge of the operation of relevant appliances and equipment
• Understands hospitality hours- Weekends, public holidays, flexible hours

Description

• To manage staff and the outlet operation on a day-to-day basis ensuring that Guest Service is in accordance with expected standards and that Mise en place requirements are completed in accordance with SOP
• To ensure that beverage stock movement is correctly and accurately tracked; as well as captured on Stock Systems
• To ensure end of service cash-ups and float management are completed correctly and efficiently
• Co-ordinating special requests and extraordinary tasks with relevant parties
• Ensure a guest satisfaction check of every guest within the outlet; dealing with any concerns and complaints in accordance with company service recovery guidelines; and by personally checking quality of both service and product on a continuous basis
• Ensure the rostering of staff to meet the operational needs of the business efficiently- Departmental HR is performed
• Motivate and drive the team by setting the example.
• Monitoring and reporting cover counts and average spend trends
• Actively proposing promotional ideas on a regular basis as well as actively driving the sales and upselling culture of the restaurant to ensure an exceptional guest experience and the financial health of the business
• Ensure that all guest enquires are responded to quickly and correctly
• Personally driving all on-the-job training within the department in line with program requirements
