Job Description - Assistant Restaurant Manager

5* Game Lodge in Madikwe is looking for an Assistant Restaurant Manager responsible for the managing of the restaurant department and harbouring a good relationship between the restaurant and kitchen departments. Lead, as well as work as part of a team. Work closely with the Restaurant Manager and perform all duties when Restaurant Manager is on leave.

  • Monitor and manage all Food & Beverage service operations.
  • Ensure all restaurant staff are well trained in order to provide the highest standard of service and comply with Skills Development requirements.
  • Motivating restaurant staff to promote cellar wines to guests (staff earn commission).
  • Responsible for supervising, monitoring and discipline of restaurant staff.
  • Ensure that all service (bar, dining areas, guest toilets & outside deck) and preparation areas (waiter station & waiter fridge) are clean, ready, and set up for the next service according to health and safety guidelines. This includes private dinners.
  • Preparing weekly shift roster and ensuring all restaurant staff are aware of shifts.
  • All stock control (stock orders and stock takes) of all beverages on the property as well as equipment in the bar, dining room & boma and crockery, cutlery & glassware used in the restaurant.
  • Corresponding with suppliers via telephone and e-mails.
  • Responsible to be present in the restaurant to meet & greet guests and introduce restaurant staff.
  • Hosting guests while assisting with service during meal-times to ensure satisfactory food & beverage service.
  • Liaising daily with head chef (or chef on duty) on dishes served.
  • Ensuring that all service staff is aware of the content and preparation of food dishes served to answer any questions regarding the food that guests may ask.
  • Wine pairing according to menu discussed with the chef on duty and relaying information to waitering staff.
  • Intricate knowledge of all aspects of the lodge in order to answer all guests' questions.
  • Reporting to management.
  • Plan and execute special occasions 
  • Set up and clear special drink-stops

Requirements:

  • Grade 12
  • Certificate or Diploma would be an advantage
  • At least 2+ years restaurant / F&B management experience
  • Coming from high end restaurants would be an advantage
  • Financial and management skills
  • Flexible and able to work hospitality hours.
  • Must be a team leader and excellent with staff
  • Must have the ability to manage and lead a team
  • Must be well groomed, reliable, courteous and flexible
  • Ability to multi-task and work under pressure
  • Problem-solving and attention to detail
