Purpose of position
To assist the Pool Complex Operations Manager to ensure the efficient, productive and profitable running of the pool complex, and to deliver excellent guest service through the setting of departmental targets and objectives,

To assist in the complete management function of the of the Pool Complex including all F&B outlets (Bar, Deck and Café), the maintenance and cleanliness of the buildings, pools, gardens, equipment as well as all health, safety and security aspects of the complex.
Duties and responsibilities
The Management of the performance of all staff and contract personnel employed in the area
Participate in the daily preparation for opening and closing of the area
Comply with all health and safety regulations
Ensure that the dress code procedures for the department is in place and that employees are neat and tidy.
Maintain the highest level of service, maintenance, sanitation, health & safety throughout the area.
To handle guest complaints and inquiries in a courteous & efficient manner, following through to make sure problems are resolved satisfactorily.
Ensure that the headcounts within the department are always within optimal levels to ensure maximum productivity within the budget
Lead the team by attracting, recruiting, training, and appraising talented personnel
Ensure that the correct recruitment process is followed for all new recruits within the F&B department
Enforce established targets, KPI’s, schedules, policies, and procedures are always strictly adhered to
Hold regular on-the-job training and coaching sessions to ensure that staff perform their duties effectively and efficiently.
Conduct probationary and performance reviews timeously..
Ensure that fair and equitable discipline is applied.
Ensure that all staff and contract personnel employed in the area are always properly and adequately trained and fully conversant with all aspects of the duties they are required to perform.
Maximize employee productivity by multi-tasking, multi skilling & flexible scheduling to meet the financial goals of the business as well as the expectations of the guests
Assist in the implementation of all systems, procedures, facilities and structures as determined by the employer from time to time, with an emphasis on those related to Food & Beverage and maintenance, with KPI’s coupled thereto.
Responsible for the final delivery of all F&B products in accordance with company´s standards
To respond to changes in the food & beverage function as dictated by management.
Approve all requisitions to ensure that they are prepared properly and placed in a proper and timely manner, and in compliance with company´s instructions.
Oversee the overall operation of the outlets and storerooms, including but not limited to stock rotation, preparation, distribution and bookkeeping.
Assist in stock takes, including 10, 20 &30 day stock counts
Stock control, issuing of stock and ordering of stock according to par stock levels
Assist in preparation of month end reports
Responsible for the overall implementation of all policies and procedures pertaining to employees, work manuals, sanitation requirements, consumptions, costs, qualities, menus, special parties and others.
Maintain proper consumption levels as instructed by the company.
Assist in the preparation of proper forecasts and reach desired revenues for all food and beverage outlets onboard.
Maintaining effective cost control in all areas of the department.
Ensure that all information from 360 Hub Support Services is cascaded down to all the employees reporting to the position.
Ensure that the Property Custodian is aware of incidents or changes on the property that might affect other parts of the Company or other Properties.
Identify customers’ needs and respond proactively to all their concerns
Provide a two-way communication and nurture an ownership environment with emphasis in motivation and teamwork
Report to management regarding sales results and productivity
Follow up on company´s policies, rules, regulations and procedures.
Perform other duties which are requested by the company.
Qualifications, Experience and Competencies
Minimum diploma or degree in Hotel Management, Food & Beverage Management or related field
Minimum 3 years as a F&B Manager in a similar sized property
Excellent knowledge of all health and safety regulations
Excellent knowledge of relevant Acts, policies, procedures.
Excellent knowledge of various computer software programs (MS Office, restaurant management software, POS)
Knowledge of strategies to promote effective local, state, or national security operations for the protection of people, data, property, and institutions
Ability to spot and resolve problems efficiently
Mastery in delegating multiple tasks
Communication and leadership skills
Up to date with latest food and beverages trends and best practices
Ability to manage personnel and meet financial targets
Driver’s license with own reliable transport
Guest oriented and service minded
Working conditions
Long hours
Weekends, Sundays, public holiday shifts
Possible night shifts
Physical requirements
Must be able to stand for long periods of time; must be able to climb stairs and hills, must be able to lift and carry heavy objects
