Overview:

My client a pristine Sea Front Boutique Hotel and choice employer in the Tanzanian Hospitality Industry is urgently recruiting for a young, talented, and energetic leader as an Executive Chef who can help them continue on their journey of building up the Hotel’s Food and Beverage program towards their vision of a best-in-class boutique hotel.

The key priorities for the new leader are to develop a 90-day improvement plan with the General Manager:

  • Revamp the a-la-carte program by assessing our current menus and the competitive market offers to deliver a new unique value proposition for the local market and in-house hotel Guests.
  • Identify and implement local training and development needs with the Sous Chef and local Tanzanian junior team.
  • Study current kitchen flow and operations to propose changes that speed up efficiency and delivery of service through proper planning and organization.
  • Identify and act on improvements based on HACCP standards.

Remuneration Structure:

  • Very Competitive Base monthly salary paid in USD $ -  net of payroll taxes (depending on experience) and participation in quarterly performance bonus plan based on achieving KPIs.
  • NSSF: Tanzania mandates a 10% payroll deduction for social security fund. Company provides an additional 10% contribution to employee account. As per current law, expats can redeem these funds on completion of contract and service.
  • Single Status accommodation near the Hotel
  • All management meals.
  • 28 days annual leave and additional R&R days at the General Manager’s discretion.
  • Airfare to home country 1x a year (potential for 2x a year if leave is split in agreement with General Manager and depending on distance to home country).
  • Local transport and associated costs.
  • Company covers all work permit and immigration visas and costs thereof.
  • Company Computer and Smart Phone.
  • Contract Details:
    • Start Date – Immediate vacancy.
    • Initial 90-day business consultancy project (to work on 90-day plan) which also serves to assess mutual fit and acts as probation review period.
    • Minimum 2-year work contract upon successful completion of probation period/consultancy and approval of visas and permits from the Tanzanian Immigration and Labor departments.
    • Must be double vaccinated against COVID-19 with proof.

Requirements – ideal Chef candidate:

  • Formal Tertiary Qualification – Culinary Arts / Food Service management or similar from a recognised tertiary institution.
  • Is inspired by the company’s A Player values.
  • Has youthful and active energy.
  • Has an entrepreneurial flair to help nurture and grow with the business.
  • Has a demonstrated track record working in upmarket hotel and/or restaurant establishments.
  • Has experience and context working in Africa and understands the opportunities and challenges that come with it – including that of developing startup kitchens and local supply chain restraints.
  • Enjoys training and mentoring others (as local talent will require training and development).
  • Understands the importance of being a “hands-on” leader to win the respect of the TEAM.
  • Has worked both in resorts and corporate markets.
  • Enjoys local cultural immersion activities and integration into the community (as our market is very loyalty driven).

Duties and Responsibilities:

Specific goals are to be developed with the Hotel’s General Manager, but generally include:

  • Improve existing quality, presentation, hygiene, and service levels to internationally accepted norms of an
  • upscale hotel through continuous coaching, training, mentoring, and development of the kitchen staff.
  • Develop the proven system for the above through proper roster, brigade planning, accountabilities, and SOP/best practices.
  • Refine and finalize the various restaurant menu concepts reflective of a “beach club” hotel: lunch, dinner, room service, breakfast, tapas, and snacks. Successfully and creatively work around potential limitations in locally available supply and kitchen equipment.
  • Provide culinary innovation in conference, meetings, and special events to create more memorable “wow” experiences for our Guests.
  • Improve the presentation, creativity, taste, and food cost – and create a differentiation from the market peers.
  • Key Performance Indicators:
    • Department Gross Operating Profit (GOP)
    • GuestRevu/Social F&B Guest Satisfaction Scores
    • Food Cost Control
    • Staff Development and Innovation Goals
