Job Description - Head Chef - Cape Town - Sea Point

Hospitality and Outdoor – New Vacancy – Head Chef 

Bistro Restaurant – Cape Town

Requirements :

  • Minimum of 4 years previous Head Chef experience in a 4/5-star hospitality environment (Essential) 
  • The Head Chef must oversee daily operations, as well as delivering an extraordinary guest experience within the lodge.
  • You will plan and supervise the activities of the team to ensure, not only the smooth and profitable running of the business, but also ensuring that we leave the world in a better place.
  • Work with Regional Executive Chef to ensure menu and food are aligned to lodge quality standards
  • Work with Regional Exec Chef to ensure food scores and budgets are being monitored and met
  • Work directly with the Guest Relations Managers and Head Guide, to ensure service standards are maintained at all times,
  • Food Hygiene and professional cooking qualifications (Essential) 
  • Knowledgeable of all dietary and religious requirements 
  • Good knowledge of creating, implementing, and maintaining written control documents and training manuals 
  • Good knowledge and understanding of stock procedures and control 
  • Good knowledge of planning, budgeting, and departmental administration 

Description :

  • Systemize and streamline the kitchen – ordering stock, food preparation and presentation, timely delivery, wastage reduction, hygiene, budget control from receiving to execution. 
  • Menu compilation and implementation 
  • Maintain and go above the established standards of food hygiene, cleaning and food handling to maintain impeccable quality within the kitchen, which meet current standards of legislation and compliance.  
  • Effective Kitchen Administration to minimize shortages and wastage and effective stock control, assuming full responsibility of any shortages, wastage, and variances.  
  • Prepare budgets and aim to achieve budgeted gross profit 
  • To take complete responsibility for the profitability of the department. 
  • To manage and monitor all costs and implement measures to control them. 

Package on offer :

  • R30-R35k per month.
