Job Description - Hotel Lounge Manager

Luxury Hotel in Camps Bay is looking for a Lounge Manager to oversee, lead, manage and support the inhouse bar / restaurant operations and Mini Bar service on a day-to-day basis.

  • Managing staff and the outlet operation on a day-to-day basis
  • Ensure that Mise en place requirements are completed in accordance with SOP
  • Operating Equipment is correctly managed to ensure sufficient stock and minimal breakages
  • Ensuring that beverage stock movement is correctly and accurately tracked; as well as captured
  • Ensuring end of service cash-ups and float management are completed in accordance with SOP
  • Coordinating special requests and extraordinary tasks in accordance with SOP
  • To manage the Bar / Restaurant Team in accordance with brand principles by ensuring constant floor presence during peak operational times
  • Monitoring and reporting cover count and average spend trends
  • Actively proposing promotional ideas as well as actively driving the sales and upselling culture of the restaurant
  • Ensure an exceptional guest experience and the financial health of the business
  • Ensure that all guest enquires are responded to
  • Creatively seeking opportunities to surprise and delight guests
  • Working together with your manager and team to be as effective and productive as possible
  • Actively seize opportunities to minimise carbon footprint by reducing wastage without compromising on guest service standards
  • Interacting with both staff and guests in a constructive manner
  • Taking personal responsibility for every guest and staff situation, seeing it through to its solution.
  • Ensuring that all staff appraisals are completed timeously
  • Manage employees with the goal of achieving the highest performance possible and high levels of staff retention.
  • Actively involved in the training and development of staff
  • Applying the performance management and corrective action tools
  • Ensuring that staff are rostered according business demands; ensuring that there is always sufficient labour available while keeping labour costs to a minimum
  • Scheduling off days and leave in a manner that allows for work/life balance, high levels of morale and productivity
  • Recommending updates to hotel policies and procedures, to maintain high standards and provide the best possible service to guests, and implement improvements where required.

Requirements:

  • Grade 12 and a Formal Qualification
  • At least 2 – 4 years’ experience in ahigh-end 5* hotel / restaurant / bar
  • Sound staff management skills
  • Fully computer literate
  • Sound financial skills
  • Excellent communication skills
