Job Description - Exec Chef - Nelspruit - Busy Business Hotel - Open to all SA demographics! Live-in.

Busy business hotel in Nelspruit is requiring a seasoned Exec Chef - Quality Execution is key!

  • Minimum of 5 years Executive Chef experience within a hotel and/or high-end Catering Environment. Banqueting/Conference chef experience preferred
  • The candidate needs to be strong on costing & presentations/exhibitions
  • HCCAP Knowledge and Certification is essential.
  • Open to all demographics, SA Nationals with a clear criminal and clear ITC record.

Job scope in general:

  • High presentation standards, excellent attention to detail and the ability to produce appealing and appetizing food items while minimizing waste and maximizing cost.
  • Approach all encounters with guests and employees in a friendly, service oriented manner.
  • Maintain a friendly and warm demeanour at all times.
  • Manage daily operations of the hotel kitchen which supplies breakfast and all banqueting/conferencing related meals.
  • Create menus and food presentation.
  • Experience of food & beverage monthly stocktakes and food cost percentages.
  • Work closely with the Banqueting Manager and Co-Ordinator to conduct day to day operations smoothly
  • Perform costings for menu accuracy
  • Minimize spoilage, waste and over production.
  • Regularly review house counts, forecasts and VIP lists.
  • Monitor all Banquet and Catering activity.
  • Maintain all kitchen inventories, maintain required par levels, and purchase food items.
  • Assist in the achievement of departmental objectives and goals.
  • Expedite peak meal periods by maintaining a "hands on" approach.
  • Work within monthly set food cost budget, adjust food requisitions and control waste.
  • Ensure timely set up and that plating/presentation exceed guest expectations
  • Performs other activities as assigned by the Head of Banqueting
  • Review food sales for accuracy daily.
  • Maintain an organized and comprehensive filing system with documentation of purchases, vouchering, schedules, forecasts, reports and tracking logs.
  • Must have strong interpersonals kills
  • Must have strong organizational and time management skills
  • Command of the English language and excellent communication skills, both written and verbal
  • Able to sit, stand, walk, and climb stairs for extended periods of time/frequently in order to interact with clients and staff
  • Basic computer knowledge of word, excel & emailing.
  • Must have excellent attention to detail
  • Ability to work well in stressful, maintain composure and objectivity while under pressure
